Harissa Spiced Turkey Mince and Rice

Turkeys are not just brought at Christmas in our house. We eat a lot of turkey all year round and we rarely eat it at Christmas. I find turkey mince make a fantastic alternative to chicken. As turkey doesn’t have a distinct flavour it is like chicken. That means anything can be added to it. The harissa spices and turkey made a delicious dinner. It’s packed with flavour and ready in under 30 minutes. We loved it so of course I had to share the recipe with you.

Equipment

  • Sharp knife
  • Chopping board
  • Vegetable grater
  • Large saucepan
  • Teaspoon
  • Tablespoon
  • Stirring spoon
  • Smaller saucepan

Ingredients

  • Turkey mince x 500g
  • Onion x 1
  • Courgette x 1
  • Carrot x 1
  • Yellow pepper x 1
  • Harissa spices x 1 – 2 tsp (includes chili flakes, ground coriander and smoked paprika)
  • Chicken or vegetable stock x 250 mls
  • Chickpea flour or plain flour x 2 heaped tbsps
  • Fresh coriander x 2 handfuls
  • Salt and pepper to taste

Method

  • Peel, slice and dice the onion and set aside.
  • Next peel the carrot and courgette and grate them.
  • Cut the top from the pepper and remove the core and the stalk.
  • Slice and dice the flesh.
  • Put the large saucepan onto a high heat.
  • Add oil to the base of the pan and leave it to heat up.
  • When the pan is hot add in the onions and fry until they start to soften.
  • Once the onions have softened add in the pepper and fry for a good 5 minutes.
  • Next add in the grated carrot and courgette and fry for a further minute or so.
  • Wait for all the vegetables to soften and then add in the harissa spices.
  • Fry for a further minute or so.
  • Now add in the turkey mince and fry until they are golden brown.
  • Pour over the stock and then sprinkle in the chickpea flour and mix together.
  • Sprinkle over the salt and pepper to taste.
  • Then turn the heat down and leave to simmer.
  • While the turkey mince is simmering cook the quinoa or rice.
  • Chop the fresh coriander.
  • Once the quinoa or rice is cooked add in the coriander to the main dish.
  • Stir the coriander until it’s all wilted down.
  • Then serve and enjoy.
