
It’s February 2025, it’s the New Year and every man and his dog seem to be on a healthy eating regime. We saw so much happen in 2024 that it’s not surprising the world and his wife want to feel better in 2025. The slow cooker is a great way to get healthy low fat meals without to much fuss. Chicken is a great meal to cook in the slow cooker pot. Plus adding lemon not only fills the dish with lots of Vitamin C but also gives it a lot of flavour. However the dish is slightly sour so watch out. Below is a video and recipe for you.
Slow Cooker Lemon Pepper Chicken

Equipment
- Sharp knife
- Chopping Board
- Fork
Ingredients
- Lemons x 2
- Onion x 1
- Garlic x 2 cloves
- Carrot x 1 large
- Chicken x 500g
- Salt and pepper to taste.
Method
- Slice the lemon in half and squeeze the juice into the slow cooker pot.
- Peel, slice and dice the carrot and the onion.
- Add these ingredients to the slow cooker pot.
- Next peel the garlic and slice it.
- Put the sliced garlic into the slow cooker pot and add in the chicken.
- Sprinkle over salt and pepper to taste.
- Put the slow cooker lid on the pot.
- Turn the slow cooker onto low for 5 – 6 hours or high for 2 – 3 hours.
- To check the chicken has cooked remove the lid and put a skewer into the breast.
- If the juices run clear it’s cooked.
- If not put the lid back on and cook for a further 15 minutes and check again until the juices run clear.
- Turn the slow cooker off and leave to rest in the pot for 30 minutes.
- Meanwhile cook the rice and add coriander or spinach to it once it’s cooked.
- Then serve and enjoy.

Slow Cooker Lemon Pepper Chicken was a tasty meal. It was easy to prepare and cook. The meal however was slightly sour. I did suggest adding honey to the pot but my husband Howard thought this sounded more like cough mixture than a meal! The meal also made delicious leftovers the next day too. Plus it could be made in advance and frozen in a dump bag before cooking it. However you decide to eat this dish, as always, please enjoy. Thank you xxx
