Raspberry and Lemon Pancakes

When I was growing up we would always celebrate pancake day. My Dad would always make pancakes for us to enjoy after our main meal. We would always eat them with lemon and sugar. I think most people would have lemon and sugar pancakes back them. It was probably all we had in the cupboard.

Nowadays we have a wider variety of foods to put on pancakes. Although I still like lemon and sugar. For these pancakes I decided to bake the lemon into the pancake. It was delicious so of course, I had to share the recipe with you. Below is a video and recipe for you.

Serves 2 – 4

Equipment

  • Baking tray or tin
  • Blender cup
  • Teaspoon
  • Knife

Ingredients

  • Almond flour x 120g
  • Almond protein powder x 60 – 80g
  • Tapioca starch x 50g
  • Baking powder x 1 – 2 tsp
  • Bananas x 2
  • Vanilla extract x 1 tsp
  • Coconut water, water or milk (your choice) x 400mls
  • Raspberries x 1 handful

Method

  • Pour oil in the base of the baking tin.
  • Spread the oil around the base and the side with the plastic brush.
  • Set the tin to one side.
  • Put the almond flour, almond protein powder, tapioca starch, baking powder, bananas, vanilla extract ad coconut water, water or milk in the blender cup.
  • Blend these ingredients together.
  • Once the pancake mixture is smooth pour into the greased baking tin.
  • Sprinkle the raspberries over the top.
  • Place the tray into the fridge overnight.
  • The next day preheat the oven to 200°C and put the tray in.
  • Bake for 20 – 25 minutes or until golden brown depending on your oven.
  • Slice the pancake into 4 or eight and serve with honey.
  • Then enjoy.

Raspberry and Lemon Pancakes were very tasty. They were easy to prepare and cook. Plus they made a yummy breakfast but they could make a great sweet treat or dessert. All the ingredients in these pancakes are freezable so you could make a large batch and freeze it. These were really good fresh but also delicious as leftovers the next day too.
