
In recent months I’ve started buying turkey mince again. It’s a great meat to eat all year round and not just at Christmas. Turkey mince is a lot like chicken as a lot of flavour can be added to it. Therefore a big heaped teaspoon of mild or hot curry powder add to fried turkey mince and vegetables was delicious. Plus putting it in the oven made the meat juicy and tender. It’s a time consuming meal but the efforts are worth the results. Below is a video and recipe for you.

- Sharp knife
- Chopping board
- Vegetable grater
- Large saucepan
- Teaspoon
- Tablespoon

Ingredients
- Turkey mince x 500g
- Onion x 1
- Garlic x 1
- Ginger x 1 inch piece
- Carrot x 1
- Courgette x 1
- Mild or hot curry powder x 1 heaped teaspoon
- Tamari x 2 tablespoons
- Chicken stock x 250 mls
- Salt and pepper to taste
- Spinach x 1 handful
- Coriander x 1 handful

Method
- Preheat the oven to 150°C or gas mark 4.
- Peel, slice and dice the onion and set aside.
- Next peel the carrot and courgette and grate them.
- Cut the top from the pepper and remove the core and the stalk.
- Slice and dice the flesh.
- Put the large saucepan onto a medium to high heat.
- Add oil to the base of the pan and leave it to heat up.
- When the pan is hot add in the onions and fry until they start to soften.
- Once the onions have softened add in the garlic and fry for a 30 seconds to 1 minutes.
- Then add in the grated ginger and fry for a further minute or so.
- Next add in the grated carrot and courgette and again fry for a further minute or so.
- If the pan get to hot turn the heat down and add a little water to the base.
- Wait for all the vegetables to soften and then add in the mild or hot curry powder.
- Fry for a further minute or so.
- Now add in the turkey mince and fry until they are golden brown.
- Pour over the stock and tamari.
- Bring to the boil and then turn the heat down and leave to simmer or 5 minutes.
- Sprinkle over the salt and pepper to taste.
- Put the lid on the saucepan and carefully place it in the oven.
- Cook for an 1 – 1 1/2 hours.
- While the dish is cooking the quinoa or rice.
- Chop the spinach and fresh coriander.
- Remove the curry from the oven.
- Once the quinoa or rice is cooked add in the chopped spinach and coriander to the main dish.
- Stir the spinach and coriander until it’s all wilted down.
- Then serve and enjoy.

Oven Baked Turkey Mince Curry was so tasty. It was very easy to prepare and cook. As I mentioned earlier it was slightly time consuming but the efforts are worth the results. Plus all the ingredients in this dish are freezable. A larger amount could be cooked and frozen for another occasion. It also made yummy leftover for lunch the next day too.
