Pizza Potato Cakes, Fried Eggs and Parma Ham

My husband Howard and son Ted love a pizza but they also love potatoes too. I decided to combine the two and make a pizza potato cake. The combination of the potatoes and pizza toppings we like to use created a delicious potato cake. We topped it with Parma Ham and an egg. We would not normally put an egg on a pizza but it added a lot of flavour to the dish. Of course I had to share the recipe with you. Below is video and recipe for you.

Ingredients

  • Potatoes x 800g
  • Cashew nut cream cheese or cream cheese x 2 – 4 tablespoons
  • Pesto x 2 – 4 tbsp
  • Tomato puree x 4 tbsp
  • Eggs x 4 – 8
  • Parma Ham x 4 – 8

Method

  • Peel and chop the potato into 2 inch pieces.
  • Put water into the saucepan and add the potatoes.
  • Place the pan on a high heat on the hob and add salt to the pan.
  • Bring the pan to the boil and turn the heat down.
  • Leave the pan to simmer on a medium heat for 3 – 5 minutes.
  • When the potatoes are knife fall remove the pan from the heat.
  • Drain using the colander and put back into the saucepan.
  • Add in the cashew nut cream cheese or cream cheese, pesto and tomato puree.
  • The potatoes maybe a little harder so if you have a ricer use that to mash the potatoes.
  • Mash these ingredients together.
  • If not keep going it will turn to mash eventually.
  • Dampen your hands under the tap.
  • Then using your hands, evenly shape eight cakes and put them onto the plate.
  • Put the plate into the fridge for 2 – 6 hours or overnight.
  • Preheat the oven to 180°C or gas mark 6.
  • When the oven has preheated put the potato cakes onto the baking tray and put into the oven.
  • In the same tray or another tray place the slices of Parma Ham and cook underneath the potato cakes.
  • Bake for 15 – 20 minutes or until they turn golden brown.
  • While they are cooking fry the eggs
  • Then serve and enjoy.

Pizza Potato Cakes, Fried Eggs and Parma Ham were so tasty. These were easy to prepare and cook. Although they were slight time consuming but they could be made the night before or they can be made at the weekend. All the ingredients are freezable so they can be stored in the freezer until they need eating. Plus they made delicious leftovers too.
