Spiced Turkey Meatballs with Rosemary and Garlic Roast Potatoes

Slightly spicy meals are normally very well received in our house. We love a mildly spicy dinner and I really enjoy using spices to add extra flavour. In recent years I have discovered spices and herbs can also be beneficial to the body. Research suggests that spices are packed with healthy compounds. That means they can help with heart management, diabetes and mood regulation. These meatballs could be a great way to lift your mood and help your heart and body too. Of course I had to share the recipe with you.

Equipment

  • Large mixing bowl
  • Tablespoon
  • Teaspoon
  • Plate
  • Sharp knife
  • Chopping board
  • Baking trays x 2
  • Colander
  • Large saucepan

Ingredients

  • Turkey mince x 500g
  • Ground flax seed x 2 – 4 tbsp
  • Tamari x 2 – 4 tbsp
  • Onion granules x 1 tsp
  • Garlic granules x 1 tsp
  • Ground cumin x 2 tsp
  • Ground sweet cinnamon x 1/2 tsp
  • Fresh coriander x 1 handful
  • Potatoes
  • Olive oil
  • Rosemary x 2 large sprigs
  • Garlic granules x 2 tsp
  • Salt and pepper to taste

Method

  • Place the turkey mince into a large mixing bowl.
  • Add in the ground flax seed, tamari, onion granules, garlic granules, ground cumin, ground sweet cinnamon and salt and pepper to taste.
  • Chop the fresh coriander finely and put it into the mixing bowl as well.
  • Dampen your hands under the tap so that the meat mixture doesn’t stick.
  • With your dampened hands scrunch all of the ingredients together until everything is well mixed in.
  • At this point you might need to dampen your hands again.
  • Split the mixture into four parts and grab a piece of the mixture.
  • Roll it between your hands until it forms a barrel shape or ball.
  • Continue until all of the mixture is has been used to make meatballs.
  • You might need to dampen your hands a couple of times during this process.
  • Place the meatballs onto a plate and put it into the fridge.
  • These can be made the day before or a couple of hours before.
  • Once the meatballs have been in the fridge preheat the oven to 200°C or gas mark 5.
  • Put the baking trays in at the same time.
  • Next pour cold water into a large saucepan.
  • Place the potatoes into the water.
  • Bring the pan to the boil.
  • When the potatoes fall from the fork then they are ready to remove from the heat.
  • After 5 minutes, if the potatoes are fork fall, drain the contents of the saucepan through the colander.
  • Now toss the colander to rough the sides of the potatoes.
  • Remove the baking tray from the oven.
  • Now put the potatoes into the baking tray and drizzle over olive oil.
  • Sprinkle of the chopped rosemary leaves and garlic granules.
  • Toss the ingredients in the oil and put the tray back into the oven for 30 minutes or until golden brown and crispy.
  • Remove the other baking tray and put the cold meatballs in.
  • Place the tray in the oven.
  • Cook for 25 – 30 minutes or until a golden brown colour and the juice have run clear.
  • Then remove both trays and serve with broccoli, peas or a side of your choice.
  • Finally enjoy.
