
Normally in the morning I crave a sweet breakfast. Occasionally I find myself wanting savoury dishes. Recently I’ve been trying to cook with red lentils. Lentils are packed with protein and fibre. They can make a very tasty meal that will leave me full for hours. Plus lentils don’t have a distinctive taste and so a lot of flavour can added to make a super yummy dish. I really enjoyed this meal and I hope you will too.

Serves 1
Equipment
- Bowl
- Colander
- Small saucepan
- Sharp knife
- Chopping board
- Frying pan
- Serving bowl
Ingredients
- Red lentils x 75 – 100g
- Baking powder x 1 tsp
- Onion x 1 small
- Tomatoes x 1 handful
- Harissa spice x 1 tsp
- Salt and Pepper to taste
- Eggs
- Avocado x 1/2
Method
- Pour water over the lentils and leave to soak in the fridge overnight.
- The next day rinse the lentil through the colander under the tap.
- Put the lentils in the saucepan and pour water over the top.
- Add in the baking powder and a pinch or two of salt.
- Bring to the boil and leave to simmer for 10 – 15 minutes.
- Peel, slice and dice the onions.
- Put the frying pan onto a high heat on the hob.
- Pour oil into the base.
- When the pan is hot add in the onions and fry until soft.
- Next put the tomatoes into the frying pan and fry until the start to split.
- Now use the spoon to squash down the tomatoes.
- Sprinkle over the harissa spices and the salt and pepper to taste.
- Once all the ingredients are well mixed together remove from the heat.
- When the lentils are soft drain through a colander and add to the pan.
- Chop spinach and coriander.
- Then put these ingredients into the frying pan.
- Mix all the ingredients together until the spinach starts to wilt.
- Remove from the pan and put into the serving bowl.
- Put the pan back onto a high heat on the hob and add oil to the base.
- When the pan is hot add an egg to the bottom and fry.
- They will start to cook on the bottom very quickly.
- Start to cut slits in the egg whites.
- You will notice the top of the whites cooking as well.
- Soon you will come to a point where you won’t be able to cut slits.
- Now leave the eggs to cook until the whites start to surround the yolks.
- The bottom of the eggs will hopefully be a lovely golden brown colour.
- Once they are then remove from the oven and serve on top of the lentil mixture.
- Slice the avocado and put this on top of the lentils too.
- Then enjoy.

Harissa Spice Mexican Hash was delicious and I thoroughly enjoyed it. It was easy to prepare and cook. Although it was slightly time consuming the efforts were worth the results. I ate this for breakfast but if you don’t have a lot of time in the morning you could have this as a lunch or dinner. It’s a great weekend dish too. It can be frozen apart from the egg but I think it much tastier cooked fresh. However you decide to eat this dish, as always, please enjoy. Thank you xxx
