
Beef has become a staple in our house. Recently I’ve been cooking a lot more beef stewing steak. I’ve always thought about it being cooked in soups and steak. I had never thought it could be eaten with hummus. Therefore I decided to make it for dinner. It was a huge success. My little family and I really enjoyed this dish. Of course, I had to share the recipe with you.

Equipment for the hummus
- Baking tray
- Sharp knife
- Chopping board
- Bowl
- Large saucepan
- Colander
- Tablespoon
- Zester
- Juicer or fork
- Teaspoon
- Food processor
Ingredients for the hummus
- Dried chickpeas x 200g
- Dried chickpea water x 2 tbsps
- Baking powder x 1 tsp
- Garlic x 1 bulb
- Olive oil x 120 mls plus extra for the end
- Tahini x 2 tbsp
- Garlic granules x 1 – 2 tsp
- Lemon x 1 (juice and zest)
- Water x 50 – 100 mls
- Salt x 1 – 2 pinches
Method for the hummus
- Pour the dried chickpeas in a bowl and cover with water.
- Put the chickpeas in the fridge overnight.
- The next day, put the chickpeas into the saucepan and cover with water.
- Make sure the chickpeas have lots of room to move in the pan.
- Put the pan onto a high heat.
- Add in the baking powder.
- Bring the chickpeas to the boil and then turn the heat down and leave to simmer for about 35 – 40 minutes.
- When cooked remove from the heat and drain the excess water through a colander.
- Put a jug underneath the colander to caught the water.
- Keep a couple of tablespoons of the water to add to the blender.
- The skin will naturally be removed from the chickpeas.
- Shake the chickpeas in the colander and there will be clumps of skin.
- Now you can either remove the clumps of skin from the chickpeas or leave in.
- It makes the hummus slightly smoother if you remove the skins.
- Preheat to 180°C or gas mark 4.
- Cut the top from the garlic.
- Drizzle oil over the top of the garlic and add a pinch of salt.
- Rub the oil and the salt into the garlic.
- Put the garlic into the baking tray cut side down.
- When the oven has preheated put the baking tray into the oven.
- Cook the garlic for about 25 – 30 minutes or until the garlic starts to go a golden brown in colour.
- Leave to cool until touchable.
- Remove the garlic from the skins and set aside.
- Once drained, put the chickpeas into the food processor.
- Add in the water from the chickpeas, tahini, olive oil and roasted garlic cloves.
- Wash the lemon and using the zester, remove the yellow skin.
- Cut the lemon in half and squeeze in the juice.
- Place in the processor.
- Blend all the ingredients together until they make a smooth paste.
- Add 50 mls of water and a little bit more if needed.
- Remove from the food processor.
- Put into a bowl and add a little more oil on top.
- Then serve and enjoy.

Method for the beef
- Preheat the oven to 200°C or gas mark 6.
- Remove the packaging from the beef.
- Put the beef into a large mixing bowl and set aside.
- Peel and slice the onion.
- Put the onions in the mixing bowl and tamari.
- Sprinkle over salt and pepper to taste and mix these ingredients into the beef.
- Add oil to the base of the baking tray.
- Put the beef into the baking tray and toss in the oil.
- Place the baking tray into the oven and cook for about 25 – 30 minutes or until the beef is a golden brown in colour.
- Remove from the oven.
- Place the hummus in a bowl and add the beef on top.
- Serve with a green salad and flat bread or gluten free oat pancakes.
- Then enjoy.

Roasted Beef with Hummus was a very yummy dinner. It was easy to prepare and cook. Although it was slightly time consuming. The hummus could be made in advance and frozen. Or made the day before. You could also cook steak instead of beef stewing steak. My husband and son ate their meals with flat bread. I ate my meal with oat pancakes.
