Leftover Burger Pasta Salad

As we are a family of three I always make meals that serve 4. It means there are always leftovers for me to eat. Instead of eating the same meal again the next day I like to turn any leftover meat into different dishes. I’m quite fond of gluten free pasta so I will often have a pasta salad with any leftover meat. I love these salads for lunch and of course, I thought I’d share the recipe with you. Below is video and recipe for you.

Ingredients

Ingredients for the burgers

  • Turkey or chicken mince x 500g
  • Onion granules x 1 tsp
  • Garlic granules x 1 tsp
  • Courgette x 1 small
  • Tamari x 2 – 4 tbsps
  • Ground flax seed or bread crumbs x 2 – 4 tbsps
  • Salt and pepper to taste

Method for the burger

  • Peel and grate the courgette.
  • Put the courgette in a large mixing bowl and add in the beef mince.
  • Sprinkle over the salt and pepper to taste and the onion and garlic granules.
  • Add in the ground flax seed or bread crumbs and the salt and pepper to taste.
  • Using your hands mix these ingredients together.
  • Once all the ingredients are well mixed together split the mixture into 4 parts as equally as possible.
  • Take a piece of mixture and then make it into a burger shape.
  • The mixture may be very wet but don’t worry about it, it will cook into a delicious burger.
  • Place the burger onto a plate and make a dimple in the middle with your fingers.
  • Put the plate into the fridge and leave for at least a couple of hours or overnight.
  • Preheat the oven to 180°C or gas mark 4 and put a baking tray in.
  • Once the oven is preheated remove the baking tray from the oven.
  • Place the burgers into the tray and put the tray into the oven.
  • Bake for about 25 – 30 minutes or until the juices run clear from the burger.
  • Leave to cool while you make the salad or used a leftover burger as well.

Ingredients for the salad and the dressing

  • Olive oil x 8 tbsp
  • Apple cider vinegar x 4 tbsp
  • Honey x 1 – 2 tsps
  • Salt and pepper to taste
  • Mild or hot chili powder 1 tsp
  • Smoked paprika x 1 tsp
  • Ground sweet cinnamon x 1 tsp
  • Oregano x 1 tsp
  • Pasta x 300g
  • Rocket 4 large handfuls
  • Tomatoes x 4 large handfuls
  • Cucumber x 1/2

Method

  • Pour the olive oil, apple cider vinegar and honey into the small mixing bowl.
  • Add in the salt and pepper to taste, mild or hot chili powder, smoked paprika, ground sweet cinnamon and oregano.
  • Mix these ingredients together.
  • Taste to see if there’s enough salt and pepper to taste.
  • If so, then set aside.
  • If there is not a little more until it’s at a taste you like.
  • Then set aside.
  • Put a large pan of water onto a high heat and add the pasta.
  • Bring to the boil and then turn the heat down.
  • Leave to simmer and cook as per the packet instructions.
  • Next wash the rocket and put into the salad bowl.
  • Slice the tomatoes in half and put these into the salad bowl too.
  • Slice the cucumber lengthways into four quarters.
  • Put the quarter cucumber next to each other on the chopping board and slice widthways.
  • Now put the cucumber into the salad bowl as well.
  • Once the pasta is cooked drain it through the colander.
  • Mix the dressing again.
  • Pour over the salad and toss these ingredients together.
  • Add the pasta to the salad toss everything again.
  • Cut the burgers into chunk of meat and place on top of the salad.
  • Then serve and enjoy.

Leftover Burger Pasta Salad is delicious. It’s easy to prepare and cook. Plus it’s packed with protein and nutrients as well. A leftover burger works well with the dish but other leftover meats and fish are great too. It’s also transportable too. You can take this to work or even on a picnic.
