
My husband Howard had a craving for southern fry chips the other day. (No Howard is not pregnant!) His suggestion gave me an idea for this dish. I love stir fries as they are always quick and easy.
It makes my life very simple when the dish isn’t complicated. I also enjoy adding flavour to dishes. After my husband’s suggestion I was planning a stir fry that week so I decided to add the southern spices to the stir fry. It made the dish so tasty that we will be eating this one again soon. We hope you will too.

Ingredients for the sauce
- Chicken Stock x 300mls
- Tomato puree x 2 tbsps
- Honey x 1 – 2 tsps
- Tamari x 1 tbsp
- Garlic granules/powder x 1 tsp
- Onion powder x 1 tsp
- Cayenne pepper x 1/8 tsp
- Mild or hot chili powder x 1 tsp
- Salt and pepper to taste
Method
- Pour the chicken stock into a measuring jug.
- Add in the tomato puree, honey, tamari, garlic granules/powder, onion powder, cayenne pepper, mild chili powder and salt and pepper to taste.
- Set to one side and continue to cook the pork.
Ingredients
- Chopped pork x 500g
- Onion x 1
- Garlic x 1
- Carrot x 1
- Bamboo x 1
- Green beans x 1 handful (optional)
- Salt and pepper to taste
- Oil for the pan
Method
- Firstly peel and slice the onion and garlic cloves.
- Next peel and slice the carrot into batons.
- Remove the lid from the bamboo shoot.
- Drain the water from the tin.
- Put a large pan onto a high heat and add oil to the base of the pan.
- Fry the onion until they start to soften.
- Add in the carrots, bamboo shoots and green beans.
- Then fry these for a further few minutes.
- Now add in the pork until it turns golden brown all over.
- Leave to heat through for a few moments..
- Pour over the sauce and leave to heat through for a minute or so.
- Cook the rice or noodles as per the packet instructions.
- Finally serve and enjoy.

Southern Spice Pork Stir Fry was a hit with my little family. They gobbled this one up without complaints. It was a quick and easy meal to prepare and cook too.
