Southern Spice Mince Beef Pasta

My son Ted is 11 and it’s even harder now to encourage him to eat vegetables. At least he does inform me that he’s allergic to veggies nowadays. Ted just wouldn’t eat them if I put a pile on his plate. Occasionally I will find a meal that he thoroughly enjoys.

Recently we have all been enjoying my husbands suggestion of southern spice so I decided to add it to mince beef. I’m so pleased I did. Not only did Ted enjoy this dish but my husband and I loved it as well. Plus it’s packed with protein and fibre. A great dinner for an eleven year old who doesn’t like vegetables. We loved this one and we hope you will too.

Equipment

  • Sharp knife
  • Chopping board
  • Vegetable grater
  • Large saucepan
  • Teaspoon
  • Stirring spoon

Ingredients

  • Beef mince x 500g
  • Onion x 1
  • Carrot x 1
  • Mild, medium or hot chilli powder x 1 tsp
  • Smoked paprika x 1 tsp
  • Garlic granules x 1 tsp
  • Onion granules x 1 tsp
  • Coriander x 1 handful chopped
  • Chicken stock or bone broth x 200mls
  • Tamari x 2 tbsp
  • Salt and pepper to taste
  • Pasta x 300g

Method

  • Peel, slice and dice the onion and set aside. .
  • Next peel the carrot and courgette and grate them.
  • Add oil to the base of the pan and leave it to heat up.
  • When the pan is hot add in the onions and fry until they start to soften.
  • Once the onions have softened add in the courgette and carrots and fry for a good 5 minutes.
  • Wait for all the vegetables to soften.
  • Now add in the beef mince and fry until they are golden brown.
  • Next add in the mild chilli powder, smoked paprika, garlic granules, onion granules and salt and pepper to taste.
  • Fry for a further minute or so.
  • Pour over the stock and tamari and bring to the boil.
  • Sprinkle over the salt and pepper to taste.
  • Then turn the heat down and leave to simmer.
  • While the meat sauce is simmering cook the pasta as per the packet instructions.
  • Once the pasta is cooked chop the coriander and add it to the meat with the pasta.
  • Stir these ingredients together.
  • Then serve and enjoy.

Southern Spice Mince Beef Pasta was a yummy meal that we all enjoyed. Howard, Ted and I cleaned our plates when this was served. It’s a very easy meal to prepare and cook. Plus the meat will freeze for another occasion. You could make a big batch of this dinner and store it in the freezer for another occasion. It also makes yummy leftover for lunch the next day too.
