
In recent months I’ve discovered the pleasure in cooking oven baked dishes. Oven baking can give you back time. An oven baked dish could be made in the morning or after lunch and left in the oven. It can also give you an hour to an 1 and a half hours to get stuff done. Plus oven baking, I think, makes the meal that much tastier. We loved this dinner and we hope you will too.

Equipment
- Large bowl
- Colander
- Saucepan
- Teaspoon
- Sharp knife
- Chopping board
- Saucepan
- Plate
- Stirring spoon
- Tablespoon
Ingredients
- Black beans x 200g
- Beans or chickpeas x as per the recipe
- Water x enough to cover the bean and then a couple inches
- Baking powder x 1 tsp
- Salt to your taste
- Mince beef x 500g
- Spring onion x 1 bunch
- Carrot x 1
- Red pepper x 1
- Green beans x 1 handful
- Tamari x 2 tbsp
- Ground ginger x 1 – 2 tsp
- Dried oregeno x 1 – 2 tsp
- Chicken or vegetable stock or bone broth x 200mls
- Salt and pepper to taste
Method
- Measure the amount of beans you will need for your recipe.
- Put them into the large bowl, if you haven’t already then cover in enough water and then a couple of inches above.
- Soak the beans in the fridge overnight.
- You may want to use a bowl with a lid.
- The next day remove the beans from the fridge and pour any excess water through the colander.
- Rinse under the tap.
- Put the beans into the large saucepan.
- Again pour enough water to cover the beans plus a two inches above.
- Add in the baking powder and salt to your taste.
- Turn the hob onto high and bring to the boil.
- When the pan starts to boil turn the heat down to low.
- Leave to simmer until most of the water has disappeared.
- Then drain through the colander and rinse under the tap.
- Set these to one side.
- Preheat the oven to 160°C or gas mark 4.
- Slice the top and the bottom from the spring onions.
- Now slice the flesh into half centimetre pieces.
- Peel the carrot and slice it length ways.
- Then slice again into quarters.
- Now slice the carrots into batons.
- Cut the top from the red pepper and remove the core and the stalk.
- Slice the flesh of the pepper and set these ingredients to one side.
- Put a large saucepan or a wok onto a high heat on the hob.
- Add oil to the base and leave the pan to heat up.
- Once the pan is hot add in the mince beef and cook until it goes brown.
- When the mince has browned remove with a slotted spoon leaving the juices behind.
- Turn the heat down if the pan is getting to hot.
- Add in the spring onions until they start to soften.
- Next add in the carrot batons, red pepper and green beans.
- Fry for a further few minutes.
- Put the mince beef back into the pan.
- Pour over the stock or broth and the tamari.
- Stir these ingredients together.
- Add in the ground ginger and dried oregano.
- Sprinkle over salt and pepper to taste.
- Bring the ingredients to the boil and then leave to simmer for 3 – 5 minutes.
- Turn the heat off on the hob and place the saucepan into the oven for an hour – an 1 and 1/2 hours.
- The stir fry should turn jammie after this time.
- Carefully remove the pan from the oven and take the lid off.
- Next cook the noodles as per the packet instructions.
- Finally serve and enjoy.

Oven Baked Mince Beef Noodles was a great dinner. It was easy to prepare and cook. Although it was slightly time consuming it did give me time to get on with other tasks. It was also yummy as leftovers the next day too. The dish could be made and frozen for another occasion too. Which means it could be a very quick dinner.
