
My son Ted, who is almost 12, absolutely loved this dish. I have made this before as a beef meal and Ted enjoyed it just as much as then as he did with this dinner. When I told him what we were having for dinner Ted asked me to make double. That’s how good it was with beef. When I served the flat pork according to Ted I did not make enough of this dinner either. So it was that good! We loved it and we hope you will too. Below is a video and recipe for you.

Equipment
- Sharp knife
- Chopping board
- Large mixing bowl
- Teaspoon
- Greaseproof paper
- Rolling pin
- Large salad bowl
- Small mixing bowl
Ingredients
- Mince pork x 500g
- Fresh rosemary x 1 handful
- Garlic powder x 1 – 2 tsp
- Ground flax seed x 4 tbsps
- Salt and pepper to taste
Method
- Pull the rosemary leaves from the stalks by pulling down from the top.
- Chop the leaves into small pieces.
- Remove all the packaging from the mince pork and leave to sit at room temperature for 30 minutes.
- Place the mince pork into the large mixing bowl.
- Add in the chopped rosemary, garlic granules and ground flax seed
- Sprinkle over salt and pepper to taste.
- Scrunch these ingredients together until everything is well mixed together.
- Cut two pieces of large greaseproof paper from the roll.
- Put the mince beef on one piece of the paper.
- Place the other sheet on top and roll the mince beef out until about 1/2 centimetre thick.
- Now put the rolled out beef onto the large baking sheet and remove the top piece of baking paper.
- Place the tray in the oven and bake for about 25 – 30 minutes.
- The pork will shrink but it will make it taste so yummy.
- Cut the pork into quarters and the into four strips.
- Serve the pork with chips or a salad.
- Then enjoy.

Flat Rosemary and Garlic Pork was delicious. It was a very easy dish to prepare and cook. The meat could be rolled out the day before and store in the fridge. Or on the morning you want to make it too. If you have a refrigerator big enough. Plus it makes delicious leftovers too. That’s if your family leave you any for lunch the next day. (Thanks Ted).
