
Now I’ve heard of pineapple on pizza but never with salmon. The other day I decided to try a salmon and pineapple salad. I had a pineapple sitting on the island in our kitchen that needed eating. I had also taken a piece of salmon out of the freezer. It was then that I had the idea to throw the two together in a salad. I have to be honest even I wasn’t sure of this dish but personally I think the pineapple added a lot of flavour to the salmon and I’m sure I will be eating this again soon. I hope you will too. Serves 4
Equipment
- Sharp knife
- Chopping board
- Baking tray
- Fork or juicer
Ingredients
- Salmon x 1
- Pineapple x 1
- Onions x 1
- Lime x 2
- Rocket x 2 handfuls
- Cucumber x 1/2
- Mint x 1 handful
- Salt and pepper to taste
- Oil for the base of the baking tray.
Method
- Preheat the oven to 200°C or gas mark 6.
- Put a baking tray in at the same time.
- Next prepare the pineapple.
- Place the pineapple on it’s side and cut the top and the bottom from the pineapple.
- To remove the skin slice downwards, along the curve of the pineapple.
- Cut deeply enough to remove the eyes.
- Now slice down the centre of the pineapple.
- Cut the two halves into quarters.
- Next remove the core by slicing the hard piece of pineapple at the tip of the quarter.
- Continue to do this to the other three quarters.
- Then slice the quarter length ways in half.
- Now dice the quarters widthways and set the pineapple pieces to one side.
- Peel and slice the onion.
- Remove the baking tray from the oven.
- Pour in the oil and put the onions and pineapple in too.
- Toss the ingredients in the oil and put the tray back into the oven for 10 minutes.
- Meanwhile add salt and pepper to the salmon.
- After 10 minutes remove the tray and add the salmon.
- Put the tray back into the oven for 15 minutes.
- When the salmon is cooked the flesh will easily fall away from itself.
- Remove the tray and leave to cool.
- Chop the rocket and the mint.
- Slice the cucumber lengthways into quarters.
- The slice the quarters widthways.
- Place the salad into the bowls.
- Put a piece of salmon on top and evenly spread the onions and pineapple over the bowls.
- Slice the limes in half and squeeze the juice over the salads.
- Garnish each bowl with any leftover mint.
- Then serve and enjoy.

Salmon Pineapple Salad was a delicious meal I really enjoyed. It was easy to prepare and cook. Plus it was packed with flavour and protein too. The dish can also be eaten hot or cold.
