Fermented Onions

Humans have been fermenting vegetables for centuries. It’s one of the easiest ways to add plenty of flavour to everyday dishes. The recipe turns the humble onion into a tangy probiotic-rich condiment. It is very time consuming but you only use a few ingredients to help add loads of flavour to a variety of meals. Below is a video and recipe for you.

Equipment

  • Sharp knife
  • Chopping board
  • Mandoline
  • Airtight glass jar
  • Tablespoon
  • Stirring spoon
  • Muslin cloth
  • Elastic band

Ingredients

  • Onions x 3 – 4 large
  • Water x enough to cover the onions
  • Salt x 1 – 2 tbsp

Methed

  • Peel and thinly slice the onion with the Mandoline.
  • Put the onion slices into the airtight glass jar and sprinkle over the salt.
  • Pour over the water.
  • Mix these ingredient together and put the muslin cloth over the top.
  • Put an elastic band or piece of string around the outside of the jar.
  • Store in a cool dark spot in the kitchen or an airing cupboard if possible.
  • Leave for 5 – 7 days.
  • Remove from the airing cupboard or the dark spot.
  • Take the muslin cloth off and remove any mold that may be in the top of the jar.
  • Put the lid on and store in the fridge.
  • Then serve with meals of your choice and enjoy.
Fermented Onions

Fermented Sliced Red Onions was very easy to prepare but very time consuming to wait for. The efforts were worth the results. The onions were crisp, slightly sour and really vibrant. They are perfect salads, sandwiches, cheeses or even just to eat straight from the jar. However you decide to eat this dish, as always, please enjoy. Thank you.
