
Now that Winter is on the way my little family and I are always is search comfort food. These juicy rosemary and garlic pork chops served with fluffy jacket potatoes are a simple, flavour packed dinner. Perfect for a cold Winter evening meal. This is a hearty homely and absolutely delicious meal. Below is a video and recipe for you.

Serves 4
Ingredients
- Baking potatoes x 4
- Pork Chops x 4
- Rosemary x 4 springs or 1 – 2 tsp of dried
- Garlic granules x 2 tsp
- Olive oil x 20 mls
- Salt and pepper to taste
Method
- Preheat the oven to 200°C or gas mark 6.
- Pierce the potatoes with the sharp knife.
- Place the potatoes into a baking tray.
- When the oven has preheated put the baking tray in and bake for 30 minutes.
- Place the pork chops in the large mixing bowl.
- If using rosemary remove the leaves from the stalks.
- Hold the top and pull down on the leaves until they are all removed.
- Chop the leaves into small pieces.
- Mix together the olive oil, garlic granules and fresh rosemary or dried in the small mixing bowl.
- Add salt and pepper to taste.
- Slice the fat on the pork chops – cut about 1 inch pieces apart.
- Pour the oil mix over the pork chops.
- Using your hands rub the oil into the chops.
- Set to one side.
- After potatoes have been in the oven for 30 minutes put the pork chops into a baking tray.
- Place the baking tray into the oven.
- Cook for about 25 – 30 minutes or until the fat has turned golden brown.
- The pork chops will need turning half way through the cooking time.
- Once the fat is golden brown and the juices are running clear remove the pork chop from the oven.
- Put a knife through the potatoes and check they are soft in the middle.
- Remove these from the oven.
- Leave everything to rest for 5 – 10 minutes.
- Finally serve with a vegetable or salad your choice.
- Then enjoy.
