
There’s nothing quite like coming home to the rich aroma of a hearty BBQ beef stew simmering away in the slow cooker. This recipe is all about comfort. It’s tender beef cooked low and slow in a smoky, tangy BBW sauce is served with a fluffy jacket potato to soak every last bit of flavour. It’s the prefect meal for a cosy night in.

- Sharp knife
- Chopping board
- Slow cooker
- Tablespoon
- Teaspoon

Ingredients
- Beef stewing steak x 500g
- Onion x 1
- Garlic x 2 cloves
- Courgette x 1
- Carrot x 1
- Spinach x 2 handfuls
- Tomatoes x 1 400g tin
- Chicken stock or bone broth x 300mls
- Tamari or soy sauce x 2 tbsp
- Mild or hot chilli powder x 1 tsp
- Smoked paprika x 1 tsp
- Paprika x 1 tsp
- Cayenne pepper x 1 – 2 pinches
- Onion granules x 1 tsp
- Garlic granules x 1 tsp
- Salt and pepper to taste
Method
- Peel, slice and dice the onion.
- Squash the garlic cloves under the knife and remove the skins.
- Now slice the cloves.
- Next peel, slice and dice the carrot and the courgette into half centimetre pieces.
- Chop the stewing steak if not chopped already and put this into the slow cooker pot.
- Pour in the tinned tomatoes and then pour in the chicken stock or bone broth.
- Add in the tamari or soy sauce.
- Stir these ingredients together.
- Sprinkle over the mild or hot chili powder, smoked paprika, paprika, cayenne pepper, garlic granules and onion granules.
- Put the lid on the pot and turn it on to high for 2 – 3 hours or low for 5 -6 hours.
- Preheat the oven to 200°C or gas mark 6.
- Once the oven preheats put the potatoes into the baking tray and place in the oven for an hour.
- When the slow cooker is done add in the spinach and let it wilt down in the pot.
- Remove the potatoes from the oven.
- Then serve and enjoy.
