Cajun Chicken and Chips

Equipment

  • Sealable food bag
  • Rolling pin
  • Large mix bowl
  • Teaspoon
  • Baking trays x 2

Ingredients

  • Chicken breasts x 500g
  • Paprika x 1 tsp
  • Smoked paprika x 1 tsp
  • Cayenne pepper x 1/4 tsp
  • Garlic granules x 1 tsp
  • Onion granules x 1 tsp
  • Dried oregano x 1 tsp
  • Olive oil x 20mls
  • Salt and pepper to taste
  • Potato or sweet potato

Method

  • Preheat the oven to 200°C or gas mark 6.
  • Put the chicken breasts into a sealable bag and flattern them with a rolling pin.
  • Once the breasts are flat place them into the large mixing bowl.
  • Add in the oil, paprika, smoked paprika, cayenne pepper, garlic granules, onion granules, dried oregano and salt and pepper to taste.
  • Mix these ingredients together with your hands.
  • Place the bowl in the fridge.
  • Peel and slice the potatoes into chips.
  • Put a a large pan of cold water onto the hob and add a pinch of salt.
  • Place the chips into the water and put the pan onto a high heat.
  • Bring the pan to the boil and then turn the heat down.
  • Leave the chips to simmer for 5 minutes.
  • Drain through a colander over the sink.
  • Place the chips into the baking tray and put into the oven.
  • Bake for 25 – 30 minutes or until golden brown.
  • Remove the chicken breasts from the oven and place them onto a baking tray.
  • Put the tray into the oven and bake for 25 – 30 minutes or until the chicken is golden and the juices are running clear.
  • Once the chicken is cooked remove from the oven and leave to rest for 5 minutes.
  • Then serve and enjoy.

Cajun Chicken and Chips was de-li-cious! It was so good my son went back for my leftovers too. My little family and I loved it. It’s was easy to prepare and cook. I would also tell you that it makes yummy leftovers but there were none for me. So I’m guessing it would make a great lunch the next day too.
