
For this recipe I’m going to turn up the heat slightly for us, but you can do more, on a Cajun spice beef stew. Tender chucks of beef stew simmering slowly in a rich, spicy sauce packed with mild Cajun flavour, vegetables and a hint of Southern soul. It’s the ultimate comfort meal. The dish is easy to prepare and cook. Plus it’s full of flavour and guaranteed to warm you up from the inside out.

Equipment
- Sharp knife

- Slow cooker

Ingredients
- Beef stewing steak x 500g
- Leek x 1
- Garlic x 2 cloves
- Butternut squash x 1
- Carrot x 1
- Tomatoes x 1 tin
- Chicken stock or bone broth x 600mls
- Tamari or soy sauce x 2 tbsp
- Tomato puree x 2 tbsp
- Paprika x 1 tsp
- Smoked paprika x 1 tsp
- Cayenne pepper x 1 – 2 pinches
- Onion granules x 1 tsp
- Garlic granules x 1 tsp
- Dried oregano x tsp
- Salt and pepper to taste
- Spinach x 1 or 2 handfuls
Method
- Peel, slice and dice the onion.
- Squash the garlic cloves under the knife and remove the skins.
- Now slice the cloves.
- Next peel, slice and dice the carrot and butternut squash into two centimetre pieces.
- Peel the potatoes and cut them into half centimetre pieces.
- Put these ingredients into the slow cooker pot if you haven’t already done so.
- Chop the stewing steak if not chopped already and put this into the slow cooker pot.
- Pour over the tomatoes, chicken stock or bone broth and add in the tamari or soy sauce and the tomato pure.
- Stir these ingredients together.
- Sprinkle over the paprika, smoked paprika, cayenne pepper, garlic granules, onion granules and dried oregano.
- Put the lid on the pot and turn it on to high for 2 – 3 hours or low for 5 -6 hours.
- When the cooking has finished add in a large handful or two of spinach and let it wilt down.
- Then serve and enjoy.
