Easy Roast Potatoes Goose Fat

Welcome to another cosy recipe in my 24 Days of Christmas guide! Today I’m sharing my Easy Roast Potatoes cooked in goose fat — the ultimate festive side dish. Perfectly golden, irresistibly crispy, and full of rich flavour. These roasties are guaranteed to elevate any Christmas meal. Whether you’re hosting a feast or cooking for your family, these potatoes bring that classic Christmas magic to the table with very little effort. Below is a video and recipe for you.

Equipment

  • Sharp knife
  • Chopping board
  • Saucepan
  • Slotted spoon
  • Cooling rack
    • Tupperware box
    • Baking tray
  • Baking tray

Serves 4 – 6

Ingredients

  • Potatoes x 800g – 1kg
  • Salt x 2 large pinches
  • Goose fat x enough to cover the base of the baking tray

Method

  • Peel and chop the potatoes into 1 inch pieces.
  • Pour cold water into a large saucepan.
  • Add a couple of pinches of salt to the water.
  • Place the peeled and chopped potatoes into the water.
  • Turn the pan onto a high heat on the hob and bring it to the boil.
  • Turn the heat down and leave it simmer for 5 minutes.
  • After 5 minutes pick a potato up with the fork if it falls off then it’s done.
  • If it doesn’t fall from the fork leave for a further minutes and check again.
  • When they are done use the slotted spoon to remove the potatoes from the boiling water and place onto the cooling rack with tray or a board underneath.
  • Leave to cool until cold.
    • Last year I stored the cooked roast potatoes in the fridge overnight in a tupperware box.
  • While the potatoes are cooling preheat the oven to 200°C or gas mark 5.
  • Pour enough oil into the baking tray to cover the base.
  • Place the baking tray into oven while it preheats.
  • Once the potatoes are cold and the oven is preheated remove the baking tray.
  • Put the potatoes into the tray and carefully toss in the hot oil.
  • Place the tray into the oven for about 25 – 30 minutes or until the potatoes are a golden brown colour.
  • Remove from the oven and serve with a roast of you choice.
  • Then enjoy.
