Serves 4 – 6

Equipment

  • Sharp knife
  • Chopping board

Ingredients

  • Chicken x 1.6
  • Parma ham x 8 – 10 slices
  • Lemon x 1
  • Onion x 1
  • Garlic x 4 – 8 cloves
  • Thyme x 1 bunch
  • Olive oil x enough to drizzle over the top
  • Salt and pepper to taste

Method

  • Remove all the packaging from the chicken.
  • Place onto a plate or a board.
  • Drizzle olive oil over the top of the chicken and rub it into the skin.
  • Next peel and cut the onion into quarters.
  • Place half of these in the base of the slow cooker pot.
  • Put the other half into the cavity of the chicken.
  • Cut the lemon in half and place this into the cavity of the chicken.
  • Place the garlic cloves in and around the chicken as well.
  • Put the thyme into the chicken too.
  • Wrap the top of the chicken in Parma ham.
  • Sprinkle over salt and pepper to taste.
  • When it’s wrapped put it into the slow cooker pot.
  • Place the lid on.
  • Turn the slow cooker on low for 5 – 6 hours or on high for 2 – 3 hours.
  • Before the end of the cooking time you can preheat the oven to 200°C or gas mark 6.
  • When the juices are running clear from the chicken you can remove it from the pot.
  • You can place the chicken into a baking tray and bake for 15 – 20 minutes or until the chicken is golden and crispy.
  • Now remove from the oven and leave to rest for 15 – 20minutes.
  • Then serve with roast potatoes, roast carrots and vegetables.
  • Finally enjoy.
