Spicy Honey Chicken

Equipment

  • Jug
  • Tablespoon
  • Teaspoon
  • Stirring spoon
  • Sharp knife
  • Chopping board
  • Vegetable peeler
  • Large saucepan

Ingredients

  • Chicken breasts x 500g
  • Onion x 1
  • Courgette x 1
  • Red pepper x 1
  • Mild or hot chili powder x 1 tsp
  • Onion granules x 1 tsp
  • Garlic granules x 1 tsp
  • Cayenne pepper x 1/4 -1 tsp
  • Chicken stock x 500mls
  • Honey x 1 – 2 tbsps
  • Tamari x 1 – 2 tbsps
  • Salt and pepper to taste.

Method

  • In the jug add the stock, mild or hot chili powder, onion granules, garlic granules, cayenne pepper, honey, tamari and salt and pepper to taste.
  • Mix these ingredients together and set to one side.
  • Peel, slice and dice the red onion.
  • Next peel and slice the courgette.
  • Cut the top from the red pepper and remove the core and the stalk.
  • Slice the flesh and set these ingredients to one side.
  • Now slice the chicken into 1 inch pieces.
  • Put a large pan onto a high heat on the hob and add oil to the base.
  • When the pan is hot add in the onions and fry until they start to soften.
  • Next add in the courgette and red pepper and fry until they start to soften.
  • At this point you may need to turn the heat down and add a little water if the ingredients are sticking to the pan.
  • Now put the chicken in and fry until it starts to colour and turn a white.
  • Pour over the sauce we made earlier.
  • Turn the heat back up to high and bring to the boil.
  • When it starts to boil turn the heat down to a medium to low heat and leave it to simmer on the hob.
  • Cook rice or a side of your choice.
  • Then serve with beans or a green of your choice.
  • Finally enjoy.
