
Thai Fish Pasta Salad is a vibrant fusion dish that brings together the bold, zesty flavours of Thailand with the comforting heartiness of pasta. Ingredients
- White fish x 500g
- Pasta or noodles x 300g
- Carrot x 1 large
- Pepper x 1
- Cucumber x 1/2
- Mint x 2 handfuls
- Coriander x 2 handfuls
- Olive oil x 60mls
- Tamari x 40mls
- Mild chili powder x 1 tsp
- Ground ginger x 1 tsp
- Honey x 1 tsp
- Salt and pepper to taste
Method
- Preheat the oven to 200°C or gas mark 6.
- Once the oven has preheated put the fish onto the baking tray.
- Place the tray in the oven and cook for 12 -15 minutes if not frozen.
- If frozen cook the fish for 20 – 25 minutes or until the flesh comes away easily with a fork.
- Next cook the pasta or noodles as per the packet instructions.
- Now peel and grate the carrot.
- Slice the top from the red pepper and remove the core and the stalk.
- Thinly slice the flesh of the pepper.
- Slice the cucumber into lengthways quarters.
- Next thinly slice the quarters.
- Roughly chop the mint and the coriander.
- Place these items into the salad bowl.
- Next in a small mixing bowl add the olive oil, tamari, mild or hot chili powder, ground ginger, onion granules, garlic granules, honey and salt and pepper to taste.
- Mix these ingredients together.
- When the pasta is cooked drain the pasta through the colander.
- Place the pasta into the salad bowl.
- Remove the fish from the oven and cut into chunks.
- Place the chunks into the salad bowl as well.
- Pour over the salad dressing and toss the salad.
- Then serve and enjoy.
