Equipment
- Large mixing bowls x 2
- Wooden spoon
- Teaspoon
- Small saucepan
- Electric whisk
- Sharp knife
- Chopping board
Ingredients
- Oats x 175g
- Tapioca starch x 60g
- Coconut flour x 60g
- Baking powder x 1 tsp
- Salt x 1 – 2 pinches
- Banana x 2
- Eggs x 2
- Coconut sugar x 60g
- Coconut oil x 60g
- Vanilla extract x 1 tsp
- Chocolate bar or raisins x 100g
Method
- In a large mixing pour the oats, tapioca starch, coconut flour, baking powder and salt.
- Mix these ingredients together.
- On a medium heat melt the coconut oil and pour it into the other large mixing bowl.
- Add in the sugar and cream these ingredients together with the electric whisk.
- Next add in the eggs and bananas.
- Whisk these ingredients.
- Fold in the oat mixture until everything is well mixed in.
- Chop the chocolate bar and fold this into the cookie mixture.
- Or fold in the raisins into the cookie mixture.
- Pre-line a baking tray.
- Dampen your hands under the tap.
- Scoop out a piece of the cookie batter, flatten it between your hands and place it onto a pre-lined a baking tray.
- Continue until all of the mixture is used.
- Store in the fridge for 30 minutes.
- While the cookies are in the fridge preheat the oven to 200°C or gas mark 6.
- Once the oven has preheated remove the tray from the fridge and place them onto a pre-lined baking tray.
- Put the baking tray into the oven.
- Bake for 10 – 12 minutes or until the cookies are golden brown.
- Leave to cool completely.
- Then serve and enjoy.
