For me breakfast is the most important meal of the day and I like nothing better than eating a big steaming bowl of porridge. Oats are a great source of fibre and they have been found to be very beneficial to the body. They contain a soluble fibre called Beta- Gluten. It’s this fibre that helps us to stay fuller for longer. It can also help to lower cholesterol and it’s a very filling food so may help you to lose weight too.

Researchers have also found that oats may help to decrease the risk of asthma. It’s a common chronic disease in children that affects the airways. Many scientists believe that weaning a baby early may increase the risk. However many studies suggest that introducing oats early may actually help to protect children against asthma.

Oats are a very versatile food and can be used in a variety of different dishes. I have to be honest I only a couple of savoury dishes but I do have lots of sweet treats and desserts. Oats can be ground and made into a flour as well.

Ground oats have been proven to be helpful to the skin. Especially for the people who suffer with eczema. I have made a variety of oat pancakes in the past that my son Ted loves to eat for breakfast. So porridge in this house is a great way to kick start our day. Plus we love the occasional treat or dessert too.

As cold season is nearly upon us, I thought a lemon biscuit would go down well. Lemons are packed full of vitamin C plus plenty of other minerals too and these are great for fighting infections that may arise at this time of year. They can also help to protect against disease and they can support our health.

For the past few years, we’ve been treating ourselves to smoked salmon and eggs for breakfast occasionally. Last year, I decided to try this combination with my sweet potato pancakes and it was so yummy. I have a gluten intolerance so sweet potato pancakes are a brilliant bread alternative. They are very tasty with smoked salmon and eggs too.

When I was a child I used to love my Nan’s homemade custard tarts. My Nan would make these with any leftover custard. Nan would always make the custard with Birds custard powder. I love custard but since I discovered my gluten intolerance I can no longer eat the delicious tinned variety. Nowadays, if I’m in the mood for custard I will make it from scratch. It sounds hard but I think it’s surprisingly easy to do. All you need is a little bit of patience and time.

My husband Howard will always have poached eggs on toast for his Saturday morning breakfasts. As I’m gluten intolerant I can no longer enjoy this breakfast with him. I know I could eat gluten free bread but I’m really not a fan. Instead I now have homemade savoury pancakes or breads that I bake myself with quinoa flour.

Normally I make myself bread or pancakes at the weekend and store them in the freezer. I had completely run out of both these items. So I opened my pantry. My eyes were roaming around when I spotted the red lentils. I decided to give the lentils a try in my pancake mix. The results were delicious and I really enjoyed eating them with poached eggs for breakfast.

Mince Pies are a huge favourite in this house. My husband Howard loves to eat a few of these delicious pies at this time of year. When I discovered I was gluten intolerant I was quite upset about not being able to have mince pies at Christmas. Although, I then started to investigate different types of pastry and I found one that ticked all my boxes. Next I set to work making a filling I really enjoyed and the rest, as they say, is history. Now I make these mince pies every year for my family and they really enjoy eating them.
