
Every so often I need a glass and a half of creamy sunshine. If I’m slightly peckish in the afternoon I will make myself a smoothie to help me get through to dinner. This smoothie is my quick sunny afternoon snack stop and it’s so easy.
If you read my blog regularly you will know how I love to experiment with ingredients. These were staring me in the face when I opened the fridge. I decided to throw them all together in a smoothie. The results were amazing and I just had to share this simple smoothie with you. Below is a video and the recipe for you.

Equipment
- Sharp knife
- Chopping board
- Tablespoon
- Measuring jug
- Nutribullet
Ingredients
- Dried apricots x 2 – 4
- Smooth almond butter x 2 teaspoons
- Oat milk x 1 – 2 mugs (or a milk of your choice)
Method
- Put the dried apricots, almond butter and milk into the Nutribullet or blender.
- Put the lid on the blender and blend all of these ingredients together.
- Once smooth pour into a glass.
- Then serve and enjoy.

Creamy Sunshine Apricot and Almond Smoothie is a great sweet treat in the afternoon. As I mentioned earlier I love a little sweet or savoury snack. It keeps those hunger pangs at bay until dinner. The smoothie could be made as part of breakfast too and it could also make a great mid morning snack as well. It’s a snack that can be picked up and taken away.
