
Over the past few year I’ve been eating liver and I love it! I have several ways to cook it and I love every way I cook it too. Salads are the one dish I have never thought to use liver. It was a hot day when I made this meal and I decided to cook it with croutons and broccoli. Which may seem a little bit strange but it worked so well.
The liver, croutons and vegetables really complimented each other and the salad dressing brought the flavours together.The salad is bursting with texture and lots of different flavours. Equipment
- Sharp knife
- Chopping board
- Saucepan
- Colander
- Vegetable grater
- Frying pan
- Mixing bowl
- Tablespoon
- Teaspoon
- Salad forks
- Serving plate
Ingredients
- Beef or chicken liver or chicken or steak x 125g
- Wholemeal bread x 2 slices (or a bread of your choice)
- Broccoli x 1 small head
- Tomatoes x 5 – 10 cherry
- Carrot x 1
- Olive oil x 3 tbsps
- Lime x 2 tsps
- Salt and pepper to taste
Method
- Cut the broccoli into florets.
- Fill a saucepan with water and put the pan onto a high heat on the hob.
- When the pan comes to the boil add in the broccoli and a pinch of salt or two.
- Once the pan is boiling turn the heat down and leave to simmer for 5 minutes or until the broccoli is soft.
- The broccoli should fall from a fork when it’s soft enough.
- Next put a frying pan onto a high heat and add oil to the base of the pan.
- When the pan is hot add in the liver and cook for about 2 minutes on either side.
- Remove from the pan and set to one side.
- If the broccoli has cooked drain it through the colander and set it to one side too.
- Add more oil to the base of the pan and put back onto a high heat.
- Once the pan is hot add in the cumin and fennel seeds and fry in the oil for a minute or so.
- To help infuse the oil with the spices tip the pan to one side and let the seeds sit in the oil for a minute.
- When the seeds start to pop tip the pan back to flat and spread the seeds across the base.
- The heat may need turning down if the pan has started to smoke.
- Cut the slices of bread into squares and place them in the pan.
- It might be better to do this in two batches depending on the size of your frying pan.
- Once the first side of the croutons is a golden brown colour flip them over and cook the other side.
- If you are making the croutons in two batches add a more oil to the base of the pan before frying the second batch.
- Once the croutons are cooked start to put the salad together.
- Grate the carrot and cut the tomatoes in half.
- Put the broccoli, tomatoes halves and grated carrot into the large mixing bowl.
- Slice the liver and put the slices into the mixing bowl.
- Add in the croutons as well.
- Pour over a couple of tablespoons of oil and 2 teaspoons of lime juice.
- Add salt and pepper to taste.
- Toss the salad together and serve onto a plate.
- Then enjoy.

Liver and Spicy Crouton Salad was delicious. It was easy to prepare and cook. Plus it was very tasty too. The first time I made this dish I cooked beef liver which was yummy.
