Sea Bass on Herby Tomato Toast

The herbs in the garden are in full bloom this year. I decided to paint a wooden box with garden vanish and plant herbs in it. So far this year the herbs in the box have given us a lot of delicious dinners. There are so many fish and herb combinations are so tasty together. When I thought about this recipe I decided to add the tinned tomatoes too. Suddenly the fish and herbs became a taste explosion. I loved this meal and I hope you enjoy it too.

Equipment

  • Small pan
  • Sharp knife
  • Chopping board
  • Baking tray

Ingredients

  • Sea bass x 1 fillet
  • Tomatoes x 1 400g tin
  • Thyme x 2 sprigs
  • Rosemary x 2 sprig
  • Oregano x 1 sprig
  • Bay leaves x 2
  • Bread x 2 slices
  • Olive oil x 2 tsps
  • Salt and pepper to your tastes

Method

  • Preheat the oven to 180°C.
  • Open the tinned tomatoes and pour into the small pan.
  • Chop the herbs and put them into the tomatoes.
  • Sprinkle over the salt and pepper to your tastes
  • Leave the tomatoes to come to the boil.
  • Stir them and turn the heat down to a simmer.
  • While the tomatoes are simmering put the sea bass into the oven and cook as per the packet instructions.
  • Toast the bread and once it’s toasted to your liking spread the olive oil over it.
  • The tomatoes should start to become jammy when left to simmer on the hob.
  • When the sauce starts to thicken remove from the heat and spread over the toast.
  • When the fish flakes away from itself it’s cook.
  • Remove it from the oven and place on top of the tomatoes.
  • Then serve and enjoy.

Sea Bass on Herby Tomato Toast was a delicious lunch that I enjoyed. It was quick and easy to do. I ate this dish all by myself and I thoroughly enjoy it. The dish can be eaten as a yummy dinner or even breakfast. Instead of sea bass you could use mackerel or even a piece of smoked salmon.
