
On a hot summers day I enjoy making easy meals. I know salads may seem boring but I often think it what you put into the salad. Spices are a brilliant way to add extra flavour to a meal. Instead of bread croutons I decided to add potoato croutons. Then I felt a little bit of Harissa spice would help to flavour this dish. Finally I added lime juice to bring the flavours together and hey presto what a delicious meal! I loved it and I hope you will too. Below is a video and recipe for you.

Equipment
- Chopping board
- Potato peeler
- Sharp knife
- Tablespoon
- Teaspoon
- Baking tray
- Tin opener
- Mixing or salad bowl
- Salad forks
- Juicer or forks
Ingredients
- Tuna x 240g tin
- Potatoes x 150 – 200g
- Harissa spice powder x 1 – 2 tsps
- Beetroot
- Cherry tomatoes
- Rocket x 1 handful
- Fennel leaves x 1 handful
- Cucumber x 1/4
- Olive oil x 1 – 3 tbsp
- Lime x 1/2 juice
- Salt and pepper to taste
Method
- Preheat the oven to 200°C or gas mark 5.
- Peel the potatoes and cut them into 2 centimetre pieces.
- Put the potatoes into a baking tray and add the 1 – 2 tbsps of oil.
- Sprinkle over the Harissa spices and add salt and pepper to taste.
- Toss the potatoes in the oil, the spices and the salt and pepper.
- Once the oven has preheated put the baking tray into the oven and cook for 30 – 40 minutes.
- Slice the tomatoes in half and put them into the salad or mixing bowl.
- Chop the rocket and fennel and put it into the bowl too.
- Grate the beetroot and pop this into the bowl.
- Finally slice the cucumber lengthways and then slice thinly width ways.
- Put the cucumber into the mixing bowl and toss these ingredients together.
- Open the tinned tuna and drain any excess liquid.
- Place the tuna into the bowl and pour over the remaining oil.
- Squeeze over the lime juice and toss these ingredients together.
- When the potatoes are cooked remove from oven and add to the salad.
- Alternatively you could cook the potatoes in the morning and put them in the salad later on when they have cooled.
- Again toss all these ingredients together and serve the salad.
- Then enjoy.

Spicy Harrisa Potato and Tuna Salad was a yummy dish that I enjoyed. It was an easy meal to prepare and cook. Plus it was packed with taste and flavour. As I mentioned in the method the potatoes could be cooked earlier in the day and added to the salad later on. This would also make a tasty packed lunch as well.
