Slow Cooker Chucky Beef Chilli Soup

Chilli was once known as the poor mans dinner. Many years ago this dish used to be made with cheap cuts of meat, beans and vegetables. Nowadays chilli is normally always mince beef, red kidney beans and vegetables. It’s also normally served with rice. I decided to cook a chunky version of this dish with pasta. To be honest I had never thought about cooking chilli in this way until I saw the beef stewing steak in the freezer! It was so tasty I had to share the recipe with you.

Equipment

  • Sharp knife
  • Chopping board
  • Slow cooker
  • Tablespoon
  • Teaspoon
  • Stirring spoon

Ingredients

  • Beef stewing steak x 500g
  • Onion x 1
  • Garlic x 2 cloves
  • Butternut squash x 100g
  • Yellow pepper x 1
  • Carrot x 1
  • Courgette x 1
  • Peas x 2 handfuls (optional)
  • Chicken stock x 800mls
  • Tamari x 1 tbsp
  • Mild chilli powder x 1 tsp
  • Ground ginger x 1 tsp
  • Ground cumin x 1 tsp
  • Ground coriander x 1 tsp
  • Ground sweet cinnamon x 1/2 tsp
  • Dried Oregano x 1 tsp
  • Bay leaves x 2
  • Salt and pepper to taste

Method

  • Peel, slice and dice the onion and garlic and put these ingredients into the slow cooker pot.
  • Next peel and grate the butternut squash, carrot and courgette.
  • Put these ingredients into the slow cooker pot as well.
  • Remove the top from the pepper and then slice and dice it.
  • Add this to the pot along with the peas.
  • Cut the beef stewing steak into chunks, if it’s not chopped already, then put this into the pot.
  • Pour over the chicken stock or bone broth and add in the tamari.
  • Sprinkle over the mild chilli powder, ground ginger, ground cumin, ground coriander, ground sweet cinnamon, dried oregano, salt and pepper to taste.
  • Add in the bay leaves and stir all of these ingredients together.
  • Put the lid on and turn the slow cooker on to high for 3 – 4 hours or on low for 7 – 8 hours.
  • Before the end of the slow cooker time cook a carbohydrate of your choice.
  • Once the carbohydrate has cooked turn the slow cooker off.
  • Then serve and enjoy.

We ate this meal with pasta but you could eat it with rice, quinoa, boiled potatoes, mash or even sweet potato mash.
