Mince Beef, Broccoli and Cheese

As a mother of a slightly fussy eater I’m always trying to feed him vegetables. My son Ted is nine and he isn’t the biggest fan of veg. For many years now I have been hiding the vegetables in Ted dinner.

When he was younger this worked well. Now Ted is older it’s not working so well. Although this dish had broccoli in it I think Ted enjoyed it. The best part for Ted was the cheese. By the time he had finished his meal the bowl was almost clean and nearly ready to put back into the cupboard. Below is a video and recipe for you.

Equipment

  • Sharp knife
  • Chopping board
  • Saucepan
  • Stirring spoon
  • Teaspoon

Ingredients

  • Beef x 500g
  • Onion x 1
  • Courgette x 1
  • Broccoli x 6 – 8 florets
  • Bone broth or chicken stock x 200mls
  • Miso paste x 1 tsp
  • Salt and pepper to taste
  • Cheddar cheese x 80g

Method

  • Peel, slice and dice the onion and set aside.
  • Next peel the courgette and grate it.
  • Cut the florets up and slice them or grate them.
  • Set these vegetables aside.
  • Put large pan onto a high heat on the hob and add oil to the base of the pan.
  • When the pan is hot add in the onion and fry for 3 – 5 minutes or until they start to soften.
  • Next add in the broccoli and fry for about 3 minutes.
  • The broccoli probably won’t soften but it will heat through.
  • Add in the courgette and fry for a couple of minutes.
  • Once the courgette has heated through add in the beef and fry until golden brown.
  • Add in the bone broth or chicken stock and bring to the boil.
  • Then leave to simmer.
  • The longer the beef is left to simmer the juicer in the meat will be.
  • While the meat is simmering add in the miso paste and salt and pepper to your taste.
  • Once the meat is juicy and tender remove from the heat.
  • Add in the cheese and stir it around until it melts in.
  • Leave a little bit aside to garnish the top of the beef.
  • Finally serve with cheese and spring onion scones or rolls and add the cheese garnish.
  • Then enjoy.

Beef, Broccoli and Cheese was hit in our house. Ted did find bits of broccoli in his dinner but he chewed through them. As I mentioned earlier I think his favourite part of the meal was the cheese. The dish is very easy to prepare and cook. Plus I made extra for the freezer so it can be eaten on another occasion. However you decide to eat this dish, as always, enjoy. Thank you Xxx
