Smokey BBQ Pork Noodles

As summer comes to a close for another year I felt it was time for an indoor BBQ meal to help us through the winter. Although it hasn’t been much of a summer in the UK and I should image the planned BBQs this year were most indoors away.

The weather in the UK is so unpredictable that we will probably have a heatwave at Christmas. In case there isn’t a warm winter I thought this easy, quick dinner will help to the winter cold at bay. It’s so tasty we had to share the recipe with you.

Serves 4

Equipment

  • Sharp knife
  • Chopping board
  • Wok or deep frying pan
  • Teaspoon
  • Tablespoon

Ingredients

  • Mince pork x 500g
  • Spring onions x 1 bunch
  • Garlic x 2 cloves
  • Carrot x 1
  • Red pepper x 1
  • Bamboo shoots x 1 240g tin
  • Water chestnuts x 1 240g tin
  • Tamari x 1 tbsp
  • Apple cider vinegar x 1 tbsp
  • Smoked paprika x 1 tsp
  • Mild, medium or hot chilli powder x 1 tsp
  • Ground ginger x 1 tsp
  • Dried oregano x 1 tsp
  • Salt and pepper to taste
  • Noodles x 300g

Method

  • Peel and slice the carrot lengthways to find small batons and set aside.
  • Cut the top from the red pepper and remove the core and the stalk.
  • Slice and dice the flesh of the pepper into 1 centimetre pieces.
  • Drain the bamboo shoot and water chestnut tins.
  • Set these ingredients aside.
  • Squash the garlic with the back of the knife and slice it.
  • Cut the top and the bottoms from the spring onions and slice these into 1 centimetre pieces.
  • Put the wok or saucepan onto a high heat on the hob.
  • When the pan is hot add in the spring onions and fry until they start to soften.
  • Next add in the garlic slices and fry for a further minute or so.
  • Then put the pork into the frying pan and fry until it becomes a golden brown colour.
  • Add in the carrots, red pepper, bamboo shoots and water chestnuts and continue to fry for a further few minutes.
  • Sprinkle over the smoked paprika, mild, medium or hot chilli powder, ground ginger, dried oregano and salt and pepper to taste.
  • Then add in the tamari and apple cider vinegar.
  • Stir all of these ingredients together.
  • Cook the noodles as per the packet instructions.
  • Add the noodles to the meat dish and mix everything together.
  • Then serve and enjoy.

Smokey BBQ Pork Noodles was a great mid week meal. We ate this dish with noodles but you could eat it with rice as well. All of the ingredients in this dinner are freezable so you can freeze it and eat it on another occasion.
