Slow Cooker Chunky Beef Curry

Beef stewing steak and curry aren’t two foods I would have put together. Whenever I used to order a curry from a takeaway I would normally always order chicken. I don’t think I have ever order beef from an Indian menu. Nowadays I prefer to eat fakeaways, mostly cooked in my slow cooker and I really enjoy trying new dishes too. Therefore I decided too try stewing steak in a curry and it worked so well. We loved it and we hope you enjoy it too. Below is a video and recipe for you.

Serves 4

Equipment

  • Sharp knife
  • Chopping board
  • Vegetable peeler
  • Slow cooker
  • Tablespoon
  • Teaspoon
  • Fine grater
  • Stirring/serving spoon

Ingredients

  • Beef stewing steak
  • Onion x 1
  • Butternut squash x 200g
  • Carrot x 1
  • Bone broth or chicken stock x 300mls
  • Mild, meduim or hot chilli powder x 1 – 2 tsp
  • Garam masala x 1 tsp
  • Ground sweet cinnamon
  • Dried oregano
  • Fresh ginger x 1 – 2 inch piece
  • Garlic x 2 cloves
  • Salt and pepper to taste

Method

  • Peel, slice and dice the onion and put the diced onion into the slow cooker pot.
  • Next peel the butternut squash and remove any seeds if necessary.
  • Slice and dice the squash into 2 centimetre pieces and put it into the slow cooker pot.
  • Now peel the carrot and cut it into 1 centimetre pieces.
  • Cut the beef stewing steak into 1 inch pieces.
  • Add in the stewing steak in and pour in the bone broth or chicken stock.
  • Sprinkle over the mild, medium or hot chilli powder, garam masala, ground sweet cinnamon, dried oregano and salt and pepper to taste.
  • Remove the skin from the garlic and the ginger.
  • Grate the garlic and ginger into the slow cooker pot.
  • Stir all the ingredients together.
  • Turn the slow cooker onto high for 3 – 4 hours and on low for 7 – 8 hours.
  • Then serve with quinoa or rice and enjoy.

Slow Cooker Chunky Beef Curry was, I’m pleased to say, a big hit in our home. My husband Howard and son Ted, who is 10 can be quite fussy eater but this curry they enjoyed. All the ingredients in this dish are freezable so you could make double of the dinner and freeze it. Then you have an even quicker fakeaway for another occasion.I ate the leftover for my lunch and it was as good as the night before. If not better!
