Porky Pork Chili

My little family can tend to be slightly fussy eaters. Therefore I’m always thinking of new recipes to feed them. It keeps our lives interesting and it means that no one gets bored of he dinners I serve. Occasionally I will stumble across an absolute ‘gem’ of a meal.

These dishes are normally ones I could add time and time again and the interest for this dinner would still be there. This meal is one of those dishes. My husband Howard and son Ted loved it. It a meal I will be serving again soon.

Ingredients

  • Pork mince x 500g
  • Onions x 1
  • Garlic x 2 cloves
  • Carrot x 1
  • Butternut squash x 200g
  • Mild, medium or hot chilli powder x 1 tsp
  • Ground cumin x 1 tsp
  • Ground coriander x 1 tsp
  • Ground ginger x 1 tsp
  • Ground sweet cinnamon x 1/2 tsp
  • Dried oregano x 1 tsp
  • Tamari x 1 tsp
  • Bone broth or chicken stock x 250 mls
  • Salt and pepper to taste
  • Coriander x 2 handfuls

Method

  • Peel and grate the carrots and the butternut squash.
  • If necessary remove any seeds from the squash.
  • Peel, slice and dice the onion and the garlic.
  • Put the large frying pan or sauce pan onto a high heat on the hob.
  • Add oil to the base and leave the pan to heat up.
  • When the pan is hot add in the onions and fry until they start to soften.
  • Next add in the garlic and fry for a further minute or so.
  • Now add in the grated carrot and butternut squash.
  • Fry these ingredient for a further few minutes.
  • Add in the pork mince and fry until it starts to go a golden brown colour.
  • It should take about 5 minutes or so.
  • Once the pork is cooked sprinkle over the mild, medium or hot chilli powder, ground cumin, ground coriander, ground ginger, ground sweet cinnamon, dried oregano and salt and pepper to taste.
  • Mix these ingredients together for a further minute or so.
  • Then pour over the bone broth or chicken stock or the tamari or soy sauce.
  • Turn the heat down, if you haven’t already to a medium heat and leave to simmer for about 20 – 30 minutes.
  • Chop the coriander and add at the end of the cooking process.
  • Stir in the coriander and let it wilt down.
  • Remove from the heat and serve with rice or my garlic and cheese rolls.
  • Then enjoy.
Porky Pork Chili

Porky Pork Chilli was a delicious dish that my little family loved. It was and easy dinner to prepare and cook. Plus it was very tasty. Recently Ted has started to enjoy more spices in his food and he even suggested making it slightly more spice next time. All the ingredients in this dish are freezable. A big batch could be made and frozen for another occasion. I served this meal with garlic and cheese rolls but you could serve it with rice or even pasta.
