
During the week I need quick, easy dinners. Prawns meals are normally always a big hit in our house so I thought I would make a curry. As many of you will know, I love my slow cooker and it’s used a lot in our house. On this occasion, I was cooking chicken stock in it and we only have one pot. Therefore I decided to cook this curry on the hob. It was a very speedy dish that had a delicious, sweet but slightly spicy flavour to it. We all really enjoyed this meal so I had to share the recipe with you.

Equipment
- Sharp knife
- Chopping board
- Saucepan
- Tablespoon

Ingredients
- Cooked or uncooked prawns x 500g
- Onions x 1
- Garlic x 2 cloves
- Carrot x 1
- Courgette x 1
- Green beans or peas x 2 large handfuls
- Coconut cream x 4 tbsps
- Garam masala x 1 tsp
- Ground cumin x 1 tsp
- Ground coriander x 1 tsp
- Ground sweet cinnamon x 1 tsp
- Dried oregano x 1 tsp
- Salt and pepper to taste
Method
- Peel, slice and dice the onions and set to one side.
- Squash the garlic cloves under the knife then peel it and slice it.
- Peel and grate the carrot and the courgette and set these ingredients aside.
- Put the saucepan onto a high heat on the hob.
- Add oil to the base of the pan and let the pan heat up.
- When the pan is hot add in the onions and fry until they start to soften.
- Next put in the garlic and fry for a further minute or so.
- Now add in the carrots and courgettes and fry for another 3 – 5 minutes.
- If the ingredients start to stick to the pan turn the heat down and add a little water to the base of the pan.
- Next add in the coconut cream and stir round.
- Sprinkle in the garam masala, ground cumin, ground coriander, ground cumin, ground sweet cinnamon, dried oregano and salt and pepper.
- Turn the heat down, if you haven’t already, to a medium heat and continue to stir the ingredients in the pan for a further few muntes.
- Now add in the uncooked prawns, if using them and cook until they all turn pink.
- If you are using cooked prawns add to the pan and mix into the sauce.
- Remove from the heat and serve with a side of your choice.
- Then enjoy.

Easy prawn curry was a yummy dinner that we all enjoyed. It was very easy to prepare and cook. Plus it made delicious leftovers the next day too. If you have used frozen cooked prawns then I wouldn’t freeze this dinner for another occasion. Although if you have used uncooked prawns then you could freeze this meal for another occasion. All the ingredients in the sauce are freezable so you could make a large batch of the sauce. However you decide to eat this dish, as always, please enjoy. Thank you xxx
