
Winter is on the way and warming meals are back on our menu. To be honest, hot dinners never really leave us and they definitely didn’t leave this summer in the UK. The weather was awful this year and it will probably continue into winter too.
Therefore it’s always nice to think of a warm dish on a cold winters night. During the colder season we will often eat stews. I have made a lot of different fish ones too. We tend to eat lot of fish and we definitely enjoy Mediterranean food as well. So I decided to put the two together and I made this tasty fish stew. We loved it and we hope you will too. Equipment
- Sharp knife
- Chopping board
- Tablespoon
- Stirring spoon
Ingredients
- Basa or Cod x 500g
- Onion x 1
- Carrot x 1
- Courgette x 1
- Red Pepper x 1
- Green beans x 1 – 2 handfuls
- Bone broth or chicken stock x 600ml
- Tomatoes x 1 400g tin
- Tamari or soy sauce a 2 tbsps
- Oregano x 1 small handful
- Thyme x 1 small handful
- Salt and pepper to taste
Method
- Peel, slice and dice the onion and put the diced pieces into the slow cooker pot.
- Next peel, slice and dice the carrot and courgette and put these in the pot.
- Cut the top from the pepper and remove the core and the stalk.
- Slice and dice the flesh and put these into the slow cooker pot.
- Add in the green beans.
- Pour over the bone broth or chicken stock.
- Add in the tamari or soy sauce, oregano and thyme.
- Sprinkle over the salt and pepper to taste.
- Stir these ingredients together.
- Put the lid on and turn the slow cooker on low for 5 – 6 hours or on high for 2 – 3 hours.
- Thirty minutes before the end of the cooking process chop the fish and put it into the slow cooker pot.
- Once the fish is flaky turn the slow cooker off and serve the stew.
- Serve with rice, pasta or potatoes and enjoy.

Slow Cooker Mediterranean Fish Stew was a big hit in our house. We all enjoyed this dinner. For me it was a very easy meal to prepare and cook. All the ingredients are freezable so you could make a big batch and freeze it for another occasion. We ate this dinner with boiled quinoa and it was so yummy.
