Spicy Pea and Mint Soup

The other day I was wandering around my kitchen wondering what I was going to have for lunch. I knew I had been soaking beans in the fridge over night so I decided to grab the peas from the fridge.

In the past I’ve made a pea soup which was delicious. Also I know from previous experiences that peas and mint go well together. I had a little bit of mint left in the garden so I thought I would throw that in as well. Finally I went to the spices in my pantry and decided to sprinkle in a little bit of mild chilli powder too. My lunch was so tasty and it was a recipe I had to share with you.

Equipment

  • Saucepan
  • Colander
  • Sharp knife
  • Chopping board
  • Teaspoon
  • Blender

Ingredients

  • Frozen peas x 200g
  • Dried cannellini x 300g
  • Onion x 1
  • Garlic x 2 – 4 cloves
  • Fresh mint x 1 small handful
  • Mild, medium or hot chilli powder x 1 tsp
  • Milk x 800mls (of your choice)

Method

  • Put the dried cannellini beans into the large bowl, if you haven’t already then cover in enough water and then a couple of inches above.
  • Soak the beans in the fridge overnight.
  • You may want to use a bowl with a lid.
  • The next day remove the beans from the fridge and pour any excess water through the colander.
  • Rinse under the tap.
  • Put the beans into the large saucepan.
  • Again pour enough water to cover the beans plus a two inches above.
  • Add in the baking powder and salt to your taste.
  • Turn the hob onto high and bring to the boil.
  • When the pan starts to boil turn the heat down to low.
  • Leave to simmer until most of the water has disappeared.
  • Then drain through the colander and rinse under the tap.
  • Set the beans to one side.
  • Boil the peas in a large pan of salty water as per the packet instructions.
  • While the peas are cooking peel and slice the onions and the garlics.
  • Next put a large frying pan onto a high heat onto the hob and add in the onion.
  • Fry until it starts to soften and go a lovely golden brown colour.
  • Add in the garlic and fry for a further 30 seconds or so.
  • Remove from the heat and leave to cool.
  • Put in all the ingredients into the blender.
  • Sprinkle in the mild, medium or hot chilli powder and salt and pepper to taste.
  • Pour over the milk and blend all of the ingredients together.
  • Blend until smooth.
  • Now pour the soup into a large saucepan and heat through until warm.
  • Then serve and enjoy.
