
When Ted goes back to school in September it feels like a New Year for him and for me too. After New Year I feel like I always make healthier meals and that’s how I feel at this time of year too. Normally during the week I make healthier meals but I make them even more when Ted has gone back.
Over the summer I tend to relax and let my family eat a few more unhealthy foods. It’s the same at Christmas. Now that the summer is over it’s back to healthy tasty meals. This is one we loved and I’m sure we will be eating again soon. Below is video and recipe for you.

Equipment
- Sharp knife
- Chopping board
- Slow Cooker
- Tablespoon
- Teaspoon
- Stirring spoon
- Serving spoon
Ingredients
- Chicken breast x 500g
- Parma ham x 8 slices
- Onion x 1
- Garlic x 2 cloves
- Carrot x 1 large
- Sliced green beans x 2 handfuls
- Tamari x 1 tbsp
- Apple cider vinegar x 1 tbsp
- Honey x 1 tbsp
- Ground ginger x 1 tsp
- Salt and pepper to taste
- Noodles x 300g
Method
- Peel and slice the onion and put it into the slow cooker pot.
- Now peel the garlic and slice it thinly.
- Next peel the carrot and cut lengthways into thin batons.
- Slice the green beans if they haven’t been sliced already and add to the pot.
- Cut the chicken into 1 inch pieces and add the pieces to the pot.
- Roughly slice the Parma ham and add this to the pot as well.
- Then add in the chicken stock or bone broth, tamari, apple cider vinegar, honey, ground ginger and salt and pepper to taste.
- Stir all of these ingredients together.
- Put the slow cooker on high for 3 – 4 hours or low for 7 – 8 hours.
- Thirty minutes before the end, add in the noodles and cook until ready to serve.
- Once the noodles are cooked all that it left to do is serve and enjoy.

Slow Cooker Chicken and Parma Ham Noodles was an easy meal to prepare and cook. Plus it was super tasty too. You can make double of the dish and freeze the leftovers for another occasion. The only part I wouldn’t freeze is the noodles. Apart from that all the other ingredients in this dish are freezable. However you decide to eat this meal, as always, please enjoy. Thank you xxx
