Orange and Honey Slow Cooker Gammon with Gravy

On Boxing day every year my dear old Dad would always make a roast gammon. In the past I have made his version and it has always been so tasty. This year I fancied a break from the normal or the traditions and I thought I would make this version instead. Of course I had to practise the recipe in advance. Don’t worry you won’t have to as this recipe is so easy but packed with flavour too. We loved it and we will be eating this one on Boxing day. As always, we hope you will too. Serves 6 – 8

Equipment

  • Sharp knife
  • Chopping board
  • Fork or juicer
  • Teaspoon
  • Tablespoon
  • Fish slice
  • Skewer
  • Saucepan
  • Colander

Ingredients

  • Gammon x 1 kg
  • Honey x 1 – 2 tbsp
  • Orange x 1/2 – 1 juice
  • Tamari or soy sauce x 1 – 2 tbsps
  • Ground ginger x 1 tsp
  • Bay leaves x 2
  • Cloves x 4
  • Bone Broth x 100 – 150mls
  • Carrots x 2 – 4
  • Salt and pepper to taste
  • Chickpea or corn flour x 1 – 2 tsps

Method

  • Remove the packaging from the gammon.
  • Score the fat of the gammon with the sharp knife.
  • Add salt and pepper to your taste to the top of the gammon.
  • Place the gammon into the slow cooker pot.
  • Put the honey into the small mixing bowl and add in the juice from 1/2 – 1 whole orange.
  • Add in the ginger and tamari too.
  • Mix these ingredients together.
  • Pour over the gammon rubbing it in as evenly as you can.
  • Put the bay leaves and cloves in too.
  • Peel the carrots and slice them into small batons.
  • Then add the carrots to the pot as well.
  • Place the lid on the pot and turn it on high for 3 – 4 hours and low for 7 – 8 hours.
  • To check the gammon is cooked place a skewer in the meat and if the juices run clear it’s cooked.
  • If they don’t run clear leave in the pot for another half an hour or so until the do run clear.
  • Remove from the pot and place on a cutting board.
  • Leave to rest for 10 minutes.
  • Meanwhile cook the gravy by pouring the juice from the slow cooker pot through a colander over a saucepan.
  • Put the saucepan onto a high heat on the hob and add chickpea flour or corn flour to the sauce.
  • Sieve the flour and then stir it in until it starts to thicken.
  • Once it starts to thicken remove from the heat and set to one side.
  • Carve the meat and then serve with the gravy, mash potatoes and green beans.
  • Then enjoy.
