Googie’s Kitchen presents Easy Mid Week Roast Chicken Dinner

During the week I am always in need of speedy dinners and this one was just what I needed. It’s not complicated at all. In fact, it’s an easy meal to prepare and cook. It’s just what I need on a busy weekday evening. My husband Howard and son Ted are huge fans of a roast chicken dinner. Therefore I knew this would be a winner with not only me but my little family as well. We love it and we hope you enjoy it as well. Below is a video and recipe for you.

Easy Mid Week Roast Chicken Dinner

Equipment

  • Sharp knife
  • Chopping board
  • Saucepans x 2
  • Colanders x 2
  • Teaspoon
  • Serving spoon

Ingredients

  • Chicken thighs and drumsticks x 750g
  • Potatoes x 800g
  • Dried mixed herbs x 1 – 2 tsps
  • Garlic granules x 1 – 2 tsps
  • Olive oil
  • Cabbage x 1/2 small
  • Salt and pepper to taste

Method

  • Preheat the oven to 200°C and put the baking tray in.
  • Peel the potatoes and cut them into 2 inch pieces.
  • Put a large saucepan onto a high heat on the hob and add water to the base.
  • Bring the pan to the boil and add a pinch of salt or two.
  • When the water is boiling put the potatoes into the saucepan and bring to the boil again.
  • Once the pan is boiling turn the heat down to simmer and cook the potatoes for 5 minutes.
  • Cook them until they can fall from a knife.
  • Remove from the heat and drain the water through the colander.
  • Shake the potatoes in the colander to make the outside rough.
  • It will help to make them crispy when in the oven.
  • Next take the baking tray from the oven and add the potatoes to the pan.
  • Drizzle over the olive oil and toss the potatoes in the oil.
  • Put the baking tray into the oven and bake for about 10 minutes.
  • Remove the tray and put the chicken drumsticks and/or thighs into the tray.
  • While the chicken is cooking cut the cabbage into strips.
  • Again put the sauce pan onto the hob and add boiling water.
  • Bring the pan to the boil.
  • Put the cabbage into the colander and place on top of the boiling water.
  • Turn the heat down to a simmer and let the cabbage cook while the chicken is in the oven.
  • Place the tray back into the oven and cook for 25 – 30 minutes or until the juices run clear from the chicken.
  • When everything is cooked serve and pour over the juice from the chicken onto the plates.
  • Then enjoy.

Easy Mid Week Chicken Dinner was yummy. As I mentioned earlier is was very easy to prepare and cook. If you wanted to get ahead on prep the potatoes could be peel and sliced the night before. Then stored in cold water in the fridge. This dish also made tasty leftovers the next day as well or you could turn it into a packed lunch as well.
