Spicy Crab Jacket

In recent months I have been eating more tinned crab. It’s delicious and tastes great in a variety of dishes. Therefore I decided to make a spicy crab sauce that could be added to a jacket potato.

In the past I have made spicy crab pasta so I know spices and crab a a brilliant combination. I have never tried these ingredients with a jacket potato. I’m so pleased I did the spices add extra flavour to the dish and make this a melt in the mouth dinner. We loved it and we hope you will too.

Equipment

  • Sharp knife
  • Chopping board
  • Baking tray
  • Saucepan
  • Stirring spoon

Ingredients

  • Crab
  • Onion x 1
  • Tomatoes x 1 tin
  • Courgette x 1
  • Red pepper x 1
  • Spinach x 2 handfuls
  • Mild, medium or hot chilli powder x 1 tsp
  • Ground ginger x 1 tsp
  • Ground sweet cinnamon x 1 tsp
  • Dried mixed herbs x 1 tsp
  • Salt and pepper to taste
  • Jacket potatoes x 4

Method

  • Preheat the oven to 200°C or gas mark 6.
  • Wash and piece holes in the potatoes with a knife.
  • When the oven has preheated put the potatoes into the oven.
  • Meanwhile peel, slice and dice the onion.
  • Peel the courgette and grate it.
  • Cut the top from the red pepper and remove the core and stalk.
  • Slice and dice the flesh.
  • Put a large pan onto a high heat on the hob and add oil to the base of the pan.
  • Once the pan is hot add in the onion and fry until it starts to soften.
  • Next add in the red pepper and fry the pepper until it starts to soften.
  • Sprinkle over the mild, medium or hot chilli powder, ground ginger, ground sweet cinnamon and the dried mixed herbs.
  • Add salt and pepper to taste.
  • Bring the sauce to the boil, if not already.
  • Leave to simmer.
  • Before the end of the potatoes cooking, open the tins of crab and add to the sauce.
  • Let it heat through for a few minutes.
  • Add in the spinach and let it wilt down in the pan.
  • Remove the sauce from the heat.
  • Next remove the potatoes from the oven and cut open.
  • Leave to cool down for 5 minutes.
  • Then serve with the sauce and enjoy.

Spicy Crab Jacket was a yummy meal that we all enjoyed. It was very easy to prepare and cook. The bonus is the sauce could be made in advance of the meal and frozen.
