Sweet and Sour Prawn Noodle Stir Fry

During the week we live very busy lives so I’m always in need of speedy meals. My son Ted and my husband Howard both enjoy prawns. It’s one food I can guarantee they will both eat. Plus they both like stir fries. So this meal was a double win for me.

When I’m cooking a stir fry I always thank God for putting the Chinese stir fry on the earth. Whoever invented this type of meal was or is a genius. It’s quick, simple and easy and you can add lots of different ingredients to the dishes you make as well. We all loved this meal and we really hope you will too. Below is a video and recipe for you.

Serves 4

Equipment

  • Sharp knife
  • Chopping board
  • Saucepan
  • Stirring spoon
  • Tablespoon
  • Teaspoon
  • Mixing bowl

Ingredients

  • Spring onions
  • Garlic x 2 cloves
  • Carrot x 1
  • Red pepper x 1
  • Green beans x 2 handfuls
  • Apple cider vinegar x 2 tbsps
  • Tamari x 2 tbsps
  • Tomato puree x 2 tbsps
  • Ground ginger x 1 tsp
  • Coconut or brown sugar x 1 tbsp
  • Dried oregano x 1 tsp
  • Salt and pepper to taste

Method

  • Mix together the apple cider vinegar, tamari, tomato puree, coconut or brown sugar, ground ginger, dried oregano and salt and pepper to taste.
  • Set the sauce aside.
  • Put a large saucepan or wok on a high heat and then add oil to the base of the pan.
  • When the pan has heated up add in the spring onions and fry until they start to soften.
  • Add in the carrots, peppers and green beans and fry for a further 5 minutes.
  • If the pan gets to hot turn the heat down and add a little bit of water to the base.
  • It will hopefully unstick the ingredients from the bottom of the pan.
  • Next add in the garlic and fry until the garlic turns a golden brown colour.
  • Remove the packaging from the prawns and add to the base of the pan.
  • If using uncooked prawns, cook until pink.
  • However, if using cooked prawns add to the base of the pan and remove from the heat.
  • Once the prawns are cooked add in the sauce and the same with the cooked prawns.
  • Stir these ingredients together and remove from the heat.
  • Meanwhile cook the noodles as per the packet instructions.
  • Stir the noodles into the prawn stir fry.
  • Then serve and enjoy.

Sweet and Sour Prawn Noodle Stir Fry is a delicious dish that we all enjoyed. It was an easy meal to prepare and cook. You could prepare the vegetables and the sauce the night before and store them in the fridge. Then all you have to do is cook them off the next day.
