
Monster Mash, let’s do the monster mash, let’s do the graveyard smash! Halloween and monsters go hand in hand. You can’t beat a good monster on a spooky, scary day. Personally I think this gruesome duo are perfect as a Halloween meal. They look scary but tasty fantastic. Plus they may make your little ones eat all their dinner. Otherwise the monster may come back and eat you!!! Wahahaha!!! Below is a video and recipe for you.

Equipment
- Baking tray
- Bowl
- Colander
- Large saucepans x 2
- Sharp knife
- Tablespoon
- Teaspoon
Ingredients
- Dried pinto beans x 2
- Onion x 1
- Garlic x 2 cloves
- Carrot x 1
- Courgette x 1
- Green beans x 2 handfuls
- Tomatoes x 1 400g tin
- Tomato puree x 2 tbsp
- Tamari x 2 tbsp
- Mild chili powder x 1 tsp
- Ground ginger x 1 tsp
- Ground sweet cinnamon x 1 tsp
- Oregano x 1 tsp
- Salt and pepper to taste
- Peppers x 4 – 8 your choice
Method
- Measure the amount of beans you will need for your recipe.
- Put them into the large bowl, if you haven’t already then cover in enough water and then a couple of inches above.
- Soak the beans in the fridge overnight.
- You may want to use a bowl with a lid.
- The next day remove the beans from the fridge and pour any excess water through the colander.
- Rinse under the tap.
- Put the beans into the large saucepan.
- Again pour enough water to cover the beans plus a two inches above.
- Add in the baking powder and salt to your taste.
- Turn the hob onto high and bring to the boil.
- When the pan starts to boil turn the heat down to low.
- Leave to simmer until most of the water has disappeared.
- Then drain through the colander and rinse under the tap.
- Set the beans to one side.
- Alternatively use tinned beans.
- Drain the tinned beans through the colander and set to one side.
- Preheat the oven to 2o0°C or gas mark 6.
- Pierce the jacket potatoes and put them into the baking tray.
- Once the oven has preheated put the tray in.
- Peel, slice and dice the onion.
- Squash the garlic under the knife and remove the skin.
- Slice the garlic as thinly as possible.
- Next peel and grate the carrot.
- Put the saucepan on a medium to high heat and drizzle the base with olive oil.
- Spread the oil as evenly as possible by tilting the pan and wait for the pan to heat up.
- Once the pan is hot, add in the onions and fry until the onions are starting to soften.
- It should take around 2 – 3 minutes or so.
- Add in the garlic and fry for a further 30 seconds or so.
- Just until the garlic starts to turn golden brown.
- Next add in the grated carrots and courgette and fry for a further 2 – 3 minutes.
- Then add in the tinned tomatoes and stir these ingredients together.
- Pour water into the empty tin and rinse the instead of it.
- Now pour the water in the tin into the saucepan.
- Add in the tomato puree and tamari.
- Sprinkle over the mild chili powder, ground ginger, ground sweet cinnamon and dried mixed herbs.
- Add salt and pepper to taste.
- Again stir these ingredients together.
- Turn the heat up and bring to the boil.
- Now turn the heat to a low heat and leave to simmer.
- Slice the top from the pepper.
- Remove the core.
- Cut a Halloween face into the flesh.
- Once the sauce is cooked spoon it into the peppers.
- Remove the baking tray from the oven and put the filled peppers in.
- Place the tray bake into the oven and cook for about 20 – 30 minutes.
- When the peppers start to brown from the oven.
- Take the potatoes from the tray and leave to cook.
- Once cool remove the flesh from the skin and discard the skin.
- Pour a little olive oil over the potatoes and mash until smooth.
- Place the potatoes on the plate and then add 1 – 2 peppers on as well.
- Then serve and enjoy.

Chili Monster Mash was a yummy meal. It was easy to prepare and cook. The ingredients in this dish are freezable so you could freeze the meal and defrost when you want to eat it. Then all you would have to do is cut the peppers and fill them with the sauce. These would make a yummy lunch or dinner but they also made tasty leftovers too.
