‘Sort of’ Snickers Bars

Many years ago I used to love a snickers bar. Nowadays due to allergies and trying not to eat that much sugar I don’t eat them anymore. Therefore I have decided to recreate a version of my own. Last year I kept viewing videos with creators making small snickers bars with dates, pecan and other ingredients.

These looked delicious and I did try this version. However if your going to eat a snickers bar then I think you have to go big. So I decided to make a big version of the small version. I loved it and I hope you will too. Below is a video and recipe for you.

Makes 6 – 8 bars

Equipment

  • Sharp Knife
  • Chopping board
  • Food processor
  • Spatula
  • Tablespoon
  • Spring form tin
  • Grease proof paper
  • Small saucepan
  • Heat proof bowl
  • Stirring spoon

Ingredients for the base

  • Pecans x 150g
  • Medjool dates x 8 – 10
  • Coconut oil x 2 tsbps

Method for the base

  • Pre-line a baking tray or spring form tin with grease proof paper.
  • Remove the stones from the Medjool dates.
  • Put the pecans, dates and coconut oil into the food processor.
  • Blend these ingredients until they are crumbly.
  • Pour the mixture from the food processor cup into the baking tray or tin.
  • Spread the mixture as evenly as possible across the base of the tin.
  • Put the base into the fridge for about 30 minutes.

Ingredients for the filling

  • Almond butter x 150g
  • Medjool dates x 100g
  • Boiling water x enough to cover the dates
  • Coconut oil x 2 tbsp
  • Vanilla extract x 1 tsp

Method for the filling

  • Boil the water.
  • Remove the stones from the Medjool dates.
  • Put them into the small bowl and pour enough water over the dates until they are covered.
  • Leave to sit for 5 minutes.
  • After 5 minutes drain the water from the bowl and put the dates in the blender cup.
  • Add in the almond butter coconut oil and vanilla extract.
  • Blend these ingredients together until they are smooth.
  • When the ingredients are smooth spread them as evenly as possible across the top of the base.
  • Put the baking tray bake into the fridge for another 30 minutes.

Ingredients

  • Dark chocolate x 100g
  • Coconut cream x 1 – 2 tbsp

Method

  • Put a small saucepan onto a high heat on the hob.
  • Add water to the base and bring to the boil.
  • Next put the bowl on top of the saucepan.
  • Break the chocolate into pieces and put it into the bowl.
  • Turn the heat down to medium or low so the water doesn’t boil over.
  • Stir the chocolate until it melts completely.
  • Remove from the heat and add in the coconut cream.
  • Once the cream has been stirred in pour the mixture over the filling.
  • Spread as evenly as possible.
  • Put back into the fridge for 30 minutes or overnight.
  • Then serve and enjoy.

‘Sort of’ Snickers Bars were delicious. These would make a great present for a relative or friend. They also make a yummy after dinner treat or a tasty treat. All the ingredients in this dish are freezable so you could make a big batch and freeze it for another occasion.
