
Soups, stews and curries are a great way to keep warm and well in winter. Occasionally during the winter months I fancy sweet treats too. As soups are a great way to keep warm I decided to make a fruit soup. I thought a fruit soup would make a delicious snack or dessert. Plus it’s pack with goodness so it will help to keep you well and warm. We really enjoyed this as a dessert and we hope you will enjoy it as well.

Serves 1 – 2
Equipment
- Sharp knife
- Chopping board
- Small saucepan
- Measuring jug
- Teaspoon
- Tablespoon
- Stirring spoon
Ingredients
- Apples x 2 small
- Dates x 2 – 4
- Water x 400mls
- Coconut sugar or honey x 2 – 3 teaspoons
- Ground sweet cinnamon x 1 tsp
- Ground cloves x 1 tsp
- Coconut cream or yoghurt x 1 – 2 tbsp
Method
- Start by peeling the apples.
- Cut them into halves and then quarters.
- To remove the core slice at an angle underneath it.
- Slice the quarters into eight.
- Put the quarters into the saucepan and add the water.
- Sprinkle in the sugar or honey, ground sweet cinnamon and ground cloves.
- Put the saucepan onto a medium to high heat.
- Bring to the boil and leave to simmer for 10 – 15 minutes.
- Or until the apple pieces are soft.
- Remove from the heat and leave to cool.
- Slice the dates lengthwise and remove the seeds.
- Now slice the dates width ways into six to eight pieces.
- Add in the dates to the fruit soup.
- Pour the fruit soup into the serving bowls.
- Next pour the yoghurt or coconut cream in a swirl, if possible.
- Then serve and enjoy.

Apple and Date Fruit Soup was a yummy treat. It was very easy to prepare and cook. The fruit soup tastes so good on a cold winters day. It can be prepared in advanced and warmed through. If you are going to make it early I would leave the dates out as these may go soggy. Always put the dates in just before serving. I would do the same with the coconut cream or yoghurt. You could also make this in advance and freeze it for another occasion. As I mentioned earlier put the dates, cream or yoghurt in once heated through.
