
Even in winter I love to eat summer fruits. We always buy bags of frozen fruit from our local supermarket. When we buy the frozen tropical fruit it always reminds me that summer is on the way. Yay! In winter I don’t like to eat it cold so the other day I decided to heat it through with mint. It made such a tasty sweet treat that I had to share the recipe with you.

Serves 1 – 2
Equipment
- Cup
- Saucepan
- Stirring spoon
- Serving bowl
Ingredients
- Frozen tropical fruit x 1 – 2 large handfuls
- Water or coconut water x 1 – 2 cups
- Coconut sugar or honey x 1 – 2 tsps
- Fresh mint x 8 – 10 leafs
- Coconut cream or cream x 2 tbsps
Method
- Put the tropical fruit into the small saucepan.
- Add in the water or coconut water, coconut sugar or honey and mint.
- Put the saucepan onto a medium to high heat and bring to the boil.
- Turn the heat down and leave to simmer.
- Simmer until the fruit is warm through.
- Pour the soup into a bowl and add the coconut cream or cream.
- Then serve and enjoy.
