Baked Chickpea Flour Pizza Pancakes

Occasionally I will really want pizza for dinner but having a gluten and dairy intolerance forbids it. That was until I discovered I could bake a chickpea flour wrap pancake. Now I can eat a delicious vegan version of pizza which tastes amazing. Plus it’s very similar to how a deep pan pizza would taste. I loved this dish and I hope you will too. Equipment

  • Mixing bowl
  • Teaspoon
  • Baking tray
  • Knife or spreader

Ingredients for the Baked Chickpea Flour Pancakes

  • Chickpea flour x 120g
  • Baking powder x 1 tsp
  • Garlic Granules x 1 tsp
  • Dried oregano x 1 tsp
  • Salt x 1 tsp
  • Milk x 200mls (your choice)
  • Oil

Method for the Baked Chickpea Flour Pancakes

  • Preheat the oven to 200°C or gas mark 6.
  • Pour oil in the base of the baking tray and spread with the plastic brush on the base and around the sides.
  • Mix the flour, baking powder, garlic granules, dried oregano and salt together in the mixing bowl.
  • Carefully stir in the milk until it resembles a pancake mixture.
  • Pour the mixture into the pre-greased baking tray.
  • Spread as evenly possible across the base or until it covers the base.
  • Once the oven has preheated put the tray in.
  • Bake for around 12 – 15 minutes or until the pancake is a lovely golden brown colour.
  • Remove and leave to cool.

Ingredients for the topping

  • Tomato puree x 2 tbsps
  • Pesto x 2 tbsps
  • Cashew nut cream cheese x 2 tbsps

Method

  • Spread the tomato puree with the spreader or knife.
  • Next spread the pesto and then the cashew nut cream cheese.
  • Place the pizza pancake back into the oven.
  • Cook for about 5 – 10 minutes or until the topping is a golden brown colour.
  • Remove and leave to cool.
  • Than serve and enjoy.

Baked Chickpea Flour Pizza Pancakes was a very tasty dinner. It was very easy to prepare and bake. It made a lovely meal at dinner time and the leftovers were devoured at lunch the next day.
