
Porridge has to be my favourite breakfast. I never thought to make my delicious oat breakfast into a flexible pancake. I kept seeing videos on my social media so I thought I would try to make these tasty pancakes. As with most pancakes I messed up the first one. Plus they don’t look particularly appetizing. However the pancakes were great wrapped around my oven baked chicken fajita’s. I loved them and I hope you will too. Below is a video and recipe for you.

Makes 8 – 10 pancakes
Equipment
- Mixing bowl with lid (if possible)
- Jug
- Blender
- Large frying pan
- Spoon
- Cooling rack
Ingredients
- Oats x 200g
- Water x 240g
- Salt x 1 pinch (optional)
Method
- In the small mixing bowl with lid put the oat and salt.
- Mix these ingredients together.
- Pour over the water.
- Place in the fridge overnight.
- The next day blend these ingredients together.
- Pour the oat back into the small mixing bowl.
- Quickly put a large frying pan onto a medium to high heat on the hob.
- When the pan is hot add a little bit of oil to the base.
- Spread around with a plastic brush, if necessary.
- Spoon in the pancake mixture until it covers the base of the pan.
- Leave this to cook until it’s golden brown on one side and around the outside of the pancake has dried.
- Then flip over until the other side is golden brown.
- You may need to turn the heat down a little during the cooking process.
- Continue to cook the pancakes until all of the mixture has been made into pancakes.
- Leave to cool.
- Then serve with a dish or sandwich filling of your choice and enjoy.

Oat Pancakes were delicious. They were fairly easy to prepare and cook. They tasted great with the dish I prepared to go with them as well. These make a great alternative to wraps. Plus all the ingredients are freezable. You could make a big batch and freeze them for another occasion. The pancakes were also good the next day as leftovers.
