Pea and Edamame Bean Pesto Dip

My husband Howard and son Ted hate peas. Please don’t worry I didn’t try and hide it from them in this pesto dip. I made this dip for myself. I love peas. Also I have recently discovered edamame beans too. So I thought I would try them in a pesto dip. To be honest, I didn’t know if the peas would work in this dish but honest you can’t really taste them. I thought it was delicious so of course, I had to share the recipe with you. Below is a video and recipe for you.

Equipment

  • Small saucepan
  • Colander
  • Sharp knife
  • Chopping board
  • Fork or juicer
  • Blender
  • Serving bowl

Ingredients

  • Frozen peas x 100g
  • Edamame beans x 100g
  • Lemon x 1
  • Cherry tomatoes x 2 handfuls
  • Basil x 1 handful
  • Rocket x 1 handful
  • Spinach x 1 handful
  • Pine nuts x 50g
  • Pumpkin seeds x 50g
  • Olive oil x 4 tbsps
  • Salt and pepper to taste

Method

  • Put the small saucepan onto a high heat on the hob.
  • Add water to the base and bring to the boil.
  • Add in the frozen peas and edamame beans and bring to the boil again.
  • Turn the heat down and leave to simmer.
  • Cook these ingredients as per the packet instructions.
  • They should be about the same amount of time.
  • Once cooked drain through a colander and add to the blender cup.
  • Slice the lemon in half and squeeze the juice into the cup.
  • Pour in the olive oil.
  • Next add in the cherry tomatoes, basil, rocket, spinach, pine nuts, pumpkin seeds and salt and pepper to taste.
  • Blend all of these ingredient together.
  • Pour the dip into a serving bowl.
  • Serve with chopped vegetables or pour over a pasta of your choice.
  • Then enjoy.
Pea and Edamame Bean Pesto Dip

Pea and Edamame Bean Pesto Dip was a great dip. I ate this with cut cucumber and carrots. Plus I also ate it with pasta and chicken too. All of the ingredients are freezable so you could make a big batch and freeze it for another occasion. It made a yummy snack but it also made a nice lunch as well.
