
Nowadays I’m all about that veg. In recent months I’ve been trying to include a wide variety of vegetables into my diet. I’ve been reading about how helpful they can be as I age. It’s always best to eat seasonally but we live in the modern world where we can get food we enjoy all year round. Therefore I decided to cook this dish and I’m so pleased I did. It was easy to cook and very tasty. Plus it was delicious with the fish I ate with it. Of course I had to share this recipe with you.

Equipment
- Sharp knife
- Chopping board
- Large mixing bowl
- Tablespoon
- Fork
- Teaspoon
- Baking tray
- Salad bowl or plate
Ingredients
- Aubergine x 1
- Courgette x 1
- Salt x 4 large pinches
- Pepper to taste
- Olive oil x 2 – 4 tbsps
- Lemon x 1 juice
- Dried mixed herbs x 1 tsps
- Rocket x 1 handful
Method
- Preheat the oven to 180°C or gas mark 5.
- Slice the aubergine and courgette into 1/4 centimetre rounds.
- Place the rounds into the large mixing bowl.
- Sprinkle over the salt and the dried mixed herbs.
- Pour over the olive oil and sprinkle over the pepper.
- Slice the lemon in half and squeeze the juice of half a lemon over the vegetables.
- Toss these ingredients together using your hands.
- Gently rub the olive oil, salt, dried mixed herbs, pepper and lemon juice into the veg.
- Place the vegetables into a baking tray.
- Put the tray into the oven and bake for about 25 – 30 minutes.
- While the vegetables are cooking put the rocket into a mixing bowl or onto a plate.
- Once the vegetables are cooked remove from the oven.
- Place them into the bowl or on the plate.
- Pour over the remaining oil and lemon juice.
- Then serve with a meal of your choice and enjoy.

Baked Aubergine and Courgette Salad was a very easy to prepare and cook. I ate this with a piece of fish and sweet potato chips. It could be eaten with chicken or steak too. Also rice or pasta makes great side to eat with this salad. You can cook this dish and store it in the fridge until you wan to eat it. It also make yummy leftovers too.
